Healthy Rice

DO NOT BE DECEIVED! The fact that this meal is topped with grated cheese shows how ironic the name of the meal is. My family loves new rice dishes on Friday Lunch, instead of the usual Dhol and Rice or Biryani. This is a simple, quick and easy rice dish, that will have your family stuffing their faces at the table, made by my aunty.



CHICKEN MARINADE 


Red chilli Paste 
Ginger and Garlic paste (you can use freshly ground ginger and garlic separately if you want)
Aromat (generous amount)
Salt 

STEPS 

  1. Marinate chicken and leave on the side. 
  2. Braise some onions till golden, than adding the frozen chopped mixed vegetables, peppers, grated tomatoes and some of the chicken marinade (red chilli powder, ginger and garlic paste, aromat and salt) and leave to cook.
  3. Than throw in your boiled rice and toss.
  4. In a separate pot (main pot - big enough for the chicken to fit in evenly), add a thin layer of oil, than a layer of the tossed and saucy rice, next pack the marinated meat on top of the rice (evenly spaced and not on top of each other), finally adding the rest of the rice on top.
  5. Steam for 14 minutes.
  6. Garnish and serve with dhay (simply whooping sour milk and freshly ground green chillies till its smooth and not so watery)
