This Almond Cake Recipe has really been trending recently,
the groups I'm on and on my instagram feed.
I blame @the_foodpassionista on Instagram,
her pictures, her long cute captions had me hooked instantly 
and I just had to try this Almond Cake Recipe.

Oh my word! Hands down it's so delicious!
I'm not much of a baker 
but after I saw how simple the recipe was I thought why not. 

I know a lot of you are in fall now and soon winter,
this is a perfect recipe to have with some tea or coffee,
wrapped in a blanket.
Even though it's summer on my side of the world,
it's so windy and rainy today so this cake is perfect for this weather.

- ALMOND CAKE INGREDIENTS - 


1 Cup Flour 
1 Cup Sugar 
1 Cup Fresh Cream
3 Eggs
2 tsp Baking Powder
1/2 tsp Vanilla Essence 

- TOPPING INGREDIENTS - 


1/2 Cup Fresh Cream
1 1/2 Tb Butter
1/4 Cup Brown Sugar



- METHOD - 

  • Beat all the wet ingredients together, next add to the dry ingredients and beat the whole mix together for about a minute. 
  • Pour into a cake tin.
  • Bake at 180 degrees celcius for 35 minutes.

  • While the cake is baking, bring the topping to a boil.
  • Next, remove from the oven, poke the cake with a skewer all over and pour the the hot topping over whilst the cake is hot and put it back in the oven but under the grill for a minute. 
  • Remove from the oven, pour the left over topping and sprinkle some toasted almond flakes.

- MY QUICK NOTE -

For some reason I found it easy to toast the almonds before hand,
take the baked cake out of the oven, plate it, poke the holes 
and pour the hot topping and add the toasted almonds on top.
This is just an easier route and I think works just as good.

The almonds really compliments the cake so beautifully,
if you personally don't like nuts in your cake you will still like this recipe 
because it's not overbearing.
I do hope you enjoyed this Almond Cake Recipe. 
I'm not much for baking but I just had to try this recipe out.

    1. Haha it's not intense which is why I love it because I'm not a fan of nuts in cake. Also you can make it for your parents, sure they will love it.
