Grilled baby prawns, crisp salad & fried chips

Best I would say is use ready cleaned baby prawns. Perfect Sunday lunch especially since summer has kicked into my side of the wall, I served it with a passion fruit drink which just freshed up the whole meal.

PRAWNS MARINADE

  • Freshly ground:
  • coriander
  • green chillies
  • garlic
  • Lemon Juice
  • Peri-Peri mild sauce
  • Mayo
  • Butter (be generous)

If you have a prawns rub you can use it too or which ever you usually prefer to use for extra taste. Also, green chilies is always up to your heat preferably. Make sure its saucy, put in a grill pan, drizzle with some olive oil and put in the grill at around 200 degrees and half way through put it at lower.

SALAD
Toss together some:

  • Lettuce
  • Cucumber
  • Carrots
  • Radish
  • Feta cheese
Quite easy, when serving you can use a salad dressing of your choice or squeeze some lemon juice on it before eating.

Now a quick and amazing way to add radish to your salad and not only slice them is to make them look like an open flower.
How do you do that you may ask?

Here are the steps:
  1. Make sure they are clean, slice the top off and the bottom, just a little.
  2. Than cut into 5 or 6 slices (like you would do for a pizza for example)
  3. Do not cut all the way through, making sure its all attached at the bottom.
  4. Pop it into a class of ice water and leave for an hour or so and you will see it open up, like seen in the picture in the slideshow.
Please don't forget to fry up some chips. Keep checking on your prawns, make sure it doesn't get so dry as its grilled.  Serve with fresh parsley and a refreshing drink.
