Is it just me or is Kashmiri Tea and Karak Chai everywhere nowadays?
Well because it is trending, 
it's pretty to look at and delicious to have I thought why not share this recipe with you. 

NOTE

You don't need 'Kashmiri tea leaves', 
you can use any 
loose green tea leaves

Nowadays, you can get the sachets of the instant Kashmiri Pink Chai,
but there's something about home-made tea that just tastes better in my opinion. 

Now this tea is also called 'noon chai',
it's so warm and cozy perfect for the cold rainy day and perfect for a tea party.

The first time I tried making this tea (as seen in the pictures),
I didn't add milk,
but the 2nd time around I did and I prefer it with milk, 
it's more creamier.

A few years ago I had the lovely opportunity to visit Kashmir,
no picture or word can really describe how beautiful the country is
and how friendly the people are. 
I swear when I left I left a piece of my soul and I will forever want to go back. 

No this is not a post card! I took this picture and it's breathtaking in person.

- INGREDIENTS -

2 Cups Water
2 Cups Cold Water
2 Cups Full Cream Milk
3 - 4 Tablespoons Green Tea Leaves 
1 Teaspoons Baking Soda
1 - 2 Cinnamon Sticks
2 Star Anises
4 Cardamom Pods [slightly crushed] 
Couple of Saffron Strands
Pinch of Salt
Sugar to taste

Sliced Almonds
Crushed Pistachios 



- METHOD -

  1. Pour 2 cups water, green tea leaves, cardamom pods, aniseed, cinnamon sticks, saffron and baking soda in a saucepan.
  2. Let the  mixture steep well and leave to boil on medium heat until the water has reduced to half (around 20 minutes). Don't forget to keep stirring. 
  3. Once the water has reduced, turn off the heat and add 2 cups of the cold water (this helps keep the pink colour, for a darker pink shade add ice cold water).
  4. Stir vigorously for around 1 minute, before turning on the heat and leave it to boil again for around 10 minutes on medium heat.
  5. Add your sugar (if wanted) and salt, leaving it boil again.
  6. Keep stirring and add the milk to this steeping tea mixture for around 10 minutes (the more you boil the tea, the stronger and creamier it will be).
  7. Strain the tea into cups and add sliced almonds/pistachios as a garnish. You can add saffron as you serve if you want to, not only does it add more flavour but it makes the tea look prettier

- NOTE -

This can be come out to a lot to finish all at once.
So you can just store away in the fridge and top up with a bit of milk,
 before boiling it again and drinking some Kashmiri Pink Chai whenever you want.

  2. This looks so delicous, unfortunately I dont like milk in my tea. There are a lot of tea shops opening up in my area, it seems to be the new thing now tea shops, instead of coffee shops, serving all different flavours of tea. Do you have any recipies of tea without milk?

    1. This can be substituted without milk, you can just use the water and skip the milk quantity. I just added milk to thicken it up so it's easily able to leave out.
