I've been wanting to make this forever now, and I specifically wanted to serve it on my sizzler stand, which my mum got me for my birthday. I'm so glad I did because not only was it the wow factor for a random Monday lunch, but it tasted delicious.
Now, I know I served this in a sizzler pan, but in no way do you need to
use one for this recipe, unless you have a large one, you
can just make this meal in it. I'm just extra when it comes to plating food
for my family; also, I needed to take pictures.
This recipe is amazing; it's a great one-pot recipe with less mess, which
means fewer clean-up items. It's quick to whip up, which you will see in the
method. If you're in a rush, you can garnish your chicken fajitas the way I
did in the same pot you cooked it in.
I served mine with tortillas, but I can see myself making this with rice or
noodles. I also served it with my Pineapple and Mango Salsa (click here for
the recipe), which hit the spot regarding the flavours, and it was perfect
in this heat.

How To Julienne Bell Peppers
I will explain how to do it, so if you already know, skip to the next
step.
- To julienne your bell peppers, cut the head off the pepper.
- Next, cut the inside around the white part connected to the pepper's sides. This will make it easy to remove the inside of the pepper with all the seeds.
- Cut the bell pepper down the middle and into quarters.
- If some of the white part is still attached to the pepper, just slice it off.
- Finally, lay each quarter down and cut into strips; it can be as thin or thick as you'd like.

6 Pieces Chicken Breasts
1/4 tsp Salt
1/4 tsp Pepper
1 Tbsp Crushed Garlic
1 - 2 tsp Red Chili Powder (adjust to your heat preference)
1/2 tsp Ground Cumin
1/4 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Paprika
1 tsp Oregano
1/2 Lime - Juice
2 Tbsp Oil
2 - 3 Bell Peppers
Mexican Cremá (Sauce) Ingredients
1/2 Cup Mayo
1/4 Cup Fresh Cream
1 Tbsp Paprika
1 tsp Cayenne Pepper
1/2 Lime - Juice
Garnish Ingredients
1 Red Onion - Sliced
Lime Wedges
1 Avocado - Sliced
Handful Fresh Coriander
Serve With
Tortillas

Method With Step-By-Step Pictures
1. Wash, pat dry, and cut the chicken breasts into strips before adding
them to a mixing bowl.
2. To the chicken, add in the oil, salt, pepper, crushed garlic, red chilli
powder, ground cumin, garlic powder, onion powder, paprika, oregano, and
lime juice before mixing it all together.
3. Next, julienne the peppers, which is a fancy way of saying 'cut them into
medium-sized strips'. If you don't know how to do it, check the section just
above the ingredient list. I share a quick method with step-by-step pictures.
4. To a medium-sized pot, add the 2 Tbsp oil at a high temperature and let
it heat up for a minute before adding in your marinated chicken
strips.
5. Brown the chicken on one side for 2 - 3 minutes before flipping it over
and browning the other side for another 2 - 3 minutes. Turn the heat down to medium-low and cook for 10 minutes.
7. Next, add in your peppers. You can add in your peppers with your chicken
all at once, but adding them some minutes later ensures they are not too
soft when you serve. Keep cooking on a medium to low
temperature.
8. Do not add any water; if you see a lot of liquid in your pot, just scoop
it out.
9. Cook for up to 30 minutes till your chicken strips are done.
10. While your chicken fajitas are cooking, prep your other ingredients.
Make your Mexican Cremá sauce.
11. Next, make your Pineapple and Mango Salsa (click here for the recipe)
and prep the sliced onions and avocado.
12. Time to serve; drizzle the Mexican Cremá over the chicken, garnish with
your fresh coriander, top with the sliced avocado, pineapple and mango
salsa, and sliced onions, and serve with tortillas.
