Currently time-travelling down memory lane via sour cream and chives
pasta
One dish I absolutely loved as a child was the
Knorr Sour Cream and Chives Pasta. Sadly, it was discontinued
where I live, but the craving for that creamy, comforting flavour never
quite left me. Around my birthday last month, I was feeling nostagic and this is how this recipe came to be.
This Sour Cream and Chives Pasta recipe is quick, easy, and
packed with flavour. It comes together with minimal prep and just a
handful of ingredients. I used a Sour Cream and Chives Seasoning Powder blend for
convenience, but don’t worry, I’ve also included instructions on how to
make it from scratch using Fresh Sour Cream and Chives if you
prefer.
Perfect as a side dish, this pasta pairs beautifully with a BBQ or
braai, especially during the colder months. It also makes a fun,
family-friendly meal, your kids will love it as much as I did when I was
younger!

Ingredients
150g Fusilli Pasta (any pasta you have in the cupboard will do)
2 Tbsp Butter
1 Tbsp Crushed Garlic
2 Cups of Milk
1/2 Cup Water
3 Tbsp Cornflour
4 Tbsp Sour Cream and Chives Seasoning Powder
1 Tbsp Fresh or Dried Chives
1 tsp Freshly Cracked Black Pepper (be generous)
Sour Cream and Chives Seasoning Powder Substitute
1/2 Cup Sour Cream
1 Tbsp Fresh or Dried Chives
1 tsp Garlic Powder
1 tsp Onion Powder
Garnish
1 tsp Fresh or Dried Chopped Chives
Method With Pictures
1. Melt the butter in a large pot over medium heat. Add the crushed
garlic and sauté for 1-2 minutes until fragrant.
2. Pour in the milk and let it warm gently.
3. While the milk is heating, make a slurry by mixing the water and cornflour in a small bowl. Stir well until smooth and free of lumps.
4. Whisk the slurry into the warm milk, 2 - 3 minutes.
5.Keep whisking as the mixture thickens into a silky, creamy sauce -
it will thicken quickly.
6. Stir
in the sour cream and chives seasoning powder, a generous amount of
freshly cracked black pepper, along with some fresh or dried chives. If
you don’t have the seasoning powder, simply add in sour cream, garlic
powder, onion powder, black pepper, and chives as a substitute.
7. Let the creamy sauce simmer for about 5 minutes, stirring
occasionally, until it thickens to a rich, velvety consistency. If the
sauce becomes too thick, simply add a bit of milk or some of the
reserved pasta water to loosen it to your preferred texture.
8. Add the cooked pasta and toss well so every piece is coated in the
rich, sour cream and chives sauce.
9. Garnish with fresh or dried chives for extra flavour and a pop of
colour, and serve hot!
