- CHICKEN -

1 kg Chicken Fillet
2 tsps Salt
2-3 tsp Ground Black Pepper
1/4 cup Oil
2 Tb Lemon Zest (fine)
6 Tb Lemon Juice
2 Tb Dry Parsley
3-4 Garlic Cloves (finely chopped)
4 Green Chillies (finely chopped)



- POTATOES - 


6 Medium Sized Potatoes
1-2 tsp Ground Fresh Black Pepper
2 tsps Salt
4 Tb Lemon Juice
2 Tb Lemon Zest
3-4 Cloves Garlic (finely chopped)
3 tsps Dry Parsley

1. Firstly, cut your chicken fillet into strips.
2. Next, season your chicken with salt and ground black pepper.
3. With the oil (with the recipe it says 1/4 cup but I used a bit less) pan fry your chicken.
4. When your chicken has browned a bit remove from the pan.
5. Next, mix the next ingredients with your chicken; lemon zest, lemon juice, dry parsley, chopped garlic and chopped green chillies. 
6. Now time to prep your potatoes, peel and cut them into chips. 
7. Season with the spices listed above. 
8. Now take a pyrex (oven) dish line with foil.
9. Layer the potatoes, followed by the chicken.
10. Add some blobs of butter and cover the chicken with another piece of foil.
11. Baked for 1 hour at 180 Degrees Celsius. 
12. Serve with some fresh crisp salad, also don't worry if your chips will remain slightly firm once done but will be coated with a lemon butter sauce. 

So this awesome recipe is from the Cosmopolitan Cuisine VI page 46. It's quite easy to make, super filling, and defiantly worth the repeat.

By the way, I am so sorry I haven't been posting in a bit I have been studying and I wrote my college paper so waiting for results to come out so I can carry on with my next course. Anyway back to the recipe, you can marinate this and freeze works perfectly, and its a good idea if you entertain a lot to have some ready home-made meals at go.



500g chicken fillet cubes
1/2 tsp crushed ginger and garlic
1 tsp fresh ground chillies
1 tsp crushed cumin
1 tsp salt
1/2 tsp cardamom powder
1/2 tsp white pepper
2 Tb grated, mozzarella cheese
1 egg beaten
1 tsp corn flour
2 Tb mascarpone cheese
2 Tb lemon juice
1 tsp green chutney

Wooden Skewers - soaked in water
2 Tb butter
1 Tb lemon juice
1 Tb finely chopped, coriander leaves

1. Combine all the ingredients and marinate the chicken for around 3 hours.
2. Thread 5 pieces  of chicken on to each skewer.
3. Grill on a braai or electric griller until tender. 
4. Melter butter and lemon juice and brush with skewers when done. 
5. Sprinkle coriander leaves over skewers and serve.
