Onion Rings Recipe

I love onion rings!

They're such a yummy side dish for any seafood you're serving and steak as well.

I will say if you cannot get your hands on some ready coated ones
and you have to make your own,

this is my go to version.

I also recorded a video,

because I do get a lot of questions on how I do it.

I suggest using red onions for onion rings,
they're much sweeter.
I will also suggest do not do prep this a day in advance,
I've tried and they don't fry nicely.

- INGREDIENTS -

2 cups Milk

1 Egg

Pinch Of Salt

1 Packet Bread Crumbs

1 - 2 Tsp Red Chili Powder

1/2 Cup Cake Flour

1 - 2 Tb Corn Flour/Corn Starch

1 - 2 Cups Sunflower Oil

Sweet Chili Sauce

- METHOD -

Cut up your red onions into rings, around 1 cm in diameter and separate them.
In a bowl, add your milk, egg, salt and whip together.
Soak your onion rings in the mix for around 1 - 2 hours.
Now in 3 separate bowls, add your bread crumbs and red chili powder in one, whipped eggs in one and your cake flour and corn starch in the last bowl
It's time to coat your onion rings, take them out from the milk mix, coat them in the flour/corn starch mix, next dip them in the eggs, next in the breadcrumbs, than back in the egg and finally breadcrumbs last.
Place in the fridge for another 1 - 2 hours.
Heat up around 1 - 2 cups of oil, when it starts to bubble a bit place all your onion rings inside and leave to fry. After 1 - 2 minutes turn them onto the other side.
When golden, strain so there's no excess oil and serve with your meal or a dipping sauce.

Tikka Prawns Recipe That Is Absolutely Mouth Watering

I'm back with more prawns!!

lol ahh my love for spicy prawns shall never fade. This tikka prawn recipe is not only spicy but is bursting with flavour!

INGREDIENTS

- Prawns 1/2 kg -

2 TB Peri-Peri Oil

3 TB Sweet Chilli Sauce

1 TB Honey

1 TB (few grinds) Peri-Peri Himalayian Salt

1 Lemon - Juice

3 tsp Ground Coriander

2 1/2 TB Freshly Crushed Garlic

4 TB Tikka Sauce

- Sauce -

1 TB Freshly Crushed Garlic

1 Lemon - Juice

1 TB Butter

TIKKA PRAWNS RECIPE METHOD

* Please note the quantity is an estimation, I cook freehand,

but I put an estimation so my viewers may have a guideline.

Feel free to adjust according to you palette.

Make a marinade with the above ingredients and marinate the prawns.
Add blobs of butter.
Sprinkle with sesame seeds.
Depending on the size of the prawns, you can grill the prawns in the oven or if they're bigger and butterflied throw them on the bbq/braai stand .
After grilling on a medium heat, few minutes before serving pour over the sauce, if the prawns are on the braai/bbq stand than use the sauce to baste.
Serve with onion rings or potato chips and a crisp salad.

That's it! Your spicy tikka prawns is ready for serving. This recipe is best served with the Apple and Lemon slushie recipe I shared before.

BBQ Tandoori Prawns

If you have been following my blog for a while,

you know how much I LOVE PRAWNS!

So when we thought off bbq'ing some butterflied queen prawns,

I was in heaven!

We are so use to grilling our prawns in an oven,

and it tastes amazing,

but bbq'ing or braai'ing it outside brings a whole new dimension to the flavours!

It is best to grill prawns with their shell because,

it won't dry out quickly and it will be juicy, and that is what you want!

The recipe I will be sharing is super simple and easy to make,

it's spicy and great to incorporate if you're doing a seafood or grill platter.

INGREDIENTS

- Prawns Marinade

1 Box of ready butterflied queen prawns (24 pieces)

2 Tb Freshly crushed garlic

3 1/2 TB Tandoori Powder

3 TB Lemon Juice

2 1/2 Peri-Peri Oil

- Sauce

2 TB Butter

3 TB Lemon Juice

2 1/2 Crushed Garlic

1 - 2 tsp Red chilli powder

* In the video and pictures I shared we just tried with 12 prawns. This is just an estimation of the quantity of spices used, usually I just wing the marinade. I will say it depends on your flavour and what you prefer so you can change it up a bit to suit your palette.

* When it comes to prawns we prefer queen prawns, they're easy to de-shell, they cook faster and they're easier to cook. You can butterfly your own prawns, but nowadays with ready butterflied prawns you can save yourself a whole lot of time. We use the Woolworths brand ones that come in a box and they're ready cleaned and butterflied.

METHOD

Make a marinade paste of all your spices and marinate your prawns over night.
Mix your sauce ingredients and bring to a quick boil desperately, this will be for basting the prawns.
When your fire is hot place your prawns shell side first, flip after a minute.
Keep flipping every minute, as you flip baste the prawn in the sauce your made - this will enhance the flavour and keep them moist.
Prawns cook fast on the braai/bbq stand, so keep a close eye on them.
Keep it braai'ing/ bbq'ing for 10 minutes tops.
Serve with a crisp cold salad and some lemon juice and bon appetit!

Kashmiri Prawns

So I won't lie I LOVE prawns! We hadn't eaten them in a while and I really was craving for them. Mum made a new recipe, and it was different from the honey marinade she always uses. I loved it, I think next time I will make a salad or onion rings to go with it as well.
But if you have prawns, give this recipe a try you won't regret it.

Obviously you will need butterflied prawns

PRAWNS MARINADE

3 TB freshly chopped garlic

4 TB Kashmiri spice (check your spice shop or in the spice section of a supermarket - alternative you can just use normal chilli powder as a substitute)

2 TB Robertson's Exotic Thai

2 TB Robertson's Cajun Spice

1 TB freshly ground pepper

1 Tb lemon juice

1/2 tsp sugar

3 TB tomato sauce (optional if you don't mind)

125g butter

Mix the marinade and preheat the oven.
Marinate the prawns and grill for 15 minutes maximum.

KASHMIRI SAUCE

125g tomato paste

4 TB butter

3 TB Kashmiri chilli powder (or substitute with any chilli powder you used when making the prawn marinade)

5 TB fresh cream

Salt to taste

Sprinkle of sugar

Combine all the ingredients in a saucepan and bring to a boil on medium heat.
Pour over the prawns and leave to simmer in the oven for a few minutes.

Serve with salad and/or onion rings.
