It's so freaky how Friday rolls around so quickly!
 I made this recipe for one Friday Lunch 
and it was so different than our usual traditional rice dishes. 
I love how spicy it was, 
I did go a bit heavy handed on the chilis
 so you can adjust the quantities for your palette.

This recipe is perfect if you want to serve it with a full chicken cut in pieces,
salad and chips 
or even grill it in the oven.

- CHICKEN STRIPS INGREDIENTS -

1 Kg (5 - 6 chicken fillet pieces) 
1 Tb Freshly Crushed Garlic
1 Tb Red Masala (Red Chili Paste)
1/4 tsp Fine Black Pepper
1 tsp Ground Cumin
2 tsp Green Chili Paste 
Juice from 1/2 a Lemon 
1/2 tsp Turmeric 
Salt To Taste 


-  SAUCE - 


4 Tb Nandos Garlic Sauce
3 Tb Nandos Peri Peri Sauce (medium heat)
4 Tb Nandos Lemon and Herb Sauce
2 Tb Nandos Garlic and Herb Sauce
2 Tb Mayo
2 Tb Tomato Paste
1 tsp Freshly Crushed Garlic
1 Tb Butter
Salt To Taste
250ml Fresh Cream 

* I used 125ml of the fresh cream.


- METHOD - 


  1. Cut your chicken fillet into strips and marinate with all the spices for 1 hour minimum. 
  2. Cook on a low heat with some water till there is very little sauce left. 
  3. Now mix all your sauce ingredients in a saucepan and bring to a boil.
  4. Pour the sauce over the chicken strips and leave to cook for a few minutes. 
  5. Garnish with a lot of fresh coriander.





- RICE INGREDIENTS -

2 Cups Rice
3 tsp Salt 
1/2 tsp Turmeric 

2 Cups Mixed Vegtables (peas, corn and cubed carrots)
1 tsp Crushed Garlic
1 tsp Lemon Pepper
2 Tb Robertson's Spice Rice 
1 1/2 tsp Green Chili Paste 


- RICE METHOD - 



  1. First boil your rice with the salt and turmeric, once down strain and leave aside. 
  2. In a pot, drizzle some olive oil (or clarified butter/ghee), when it starts to heat up add your mixed veggies and cook for a few seconds. 
  3. Next, add your garlic, lemon pepper, spice rice and green chili paste.
  4. Mix with the veggies and leave to cook for a few more seconds. 
  5. Now add in your rice, mix well and steam before serving. 



- PLEASE NOTE -

Nandos Sauces are slowly becoming available internationally in store and online. 
If you do not have access to these specific sauces, you can still use this recipe and substitute to a different brand.
