Well even though we're already February, I still want to start this year of recipe posts on a healthy note, and what's more healthy than a delicious and low-calorie salad dressing!

Now, this mango salad dressing has a lovely balance between sweet and spicy, and it will make your taste buds very happy. It's mango season where I'm at and not only am I enjoying them as is, but I'm trying to make use of them in different ways.

If you don't have fresh mangos, you can use tinned mango cubes/slices or frozen mango. This salad dressing is a thick consistency, and if you're using tinned or frozen mangos just note it may be a bit thinner.

It's such a quick, no fussy recipe, that will up your salad game instantly. Also, if you have puri on hand, definitely enjoy it with this.

INGREDIENTS

2 Ripe Mangoes
1/2 Cup Orange Juice 
2 Tbsp Lemon Juice
1 tsp Vinegar
2 - 3 Tbsp Olive Oil
1/2 tsp Cumin Powder
2 tbsp Honey
1 - 2 Green Chilies (adjust depending on your heat preference)
2 Garlic Cloves 
1/4 tsp Ground Pepper
Handful Fresh Coriander (1/4 Cup)
Pinch of  Red Chili Flakes (optional)
Pinch of Salt 

  • Just note, I used a salt and chilli flakes mix grinder, so the red chilli flakes are very optional. 

METHOD

  1. Wash, peel, and slice your mangoes, before popping them into your blender or chopper. 
  2. Next, add in the rest of the ingredients.
  3. Pulse your mixture for a few seconds till smooth. Give it a quick taste, it should be a delicious balance between sweet and spicy. You may want to add more chillies or honey, to balance out the flavours a bit more. This is also quite a thick salad dressing, if you'd like to thin it out, you can add more orange juice. 
  4. Transfer into a glass jar, and leave it in the fridge for 1-hour minimum to chill, before serving it. It lasts for up to 1 - 2 weeks in the fridge.
