"When life throws you a burger,
eat it!"
Let me tell you, this is one delicious and easy burger recipe. It will be a lifesaver, on days when you have no idea what to make.
I played around in the kitchen one morning and made this for my dad and me for lunch. I won't bore you with a whole life story about the Buffalo Chicken Burgers because the taste speaks for itself, and it is dad-approved lol.
Check out the extra suggestions down below, I share a few different ways you can use the chicken filling in other quick meals, as well as different drizzle sauce options.
If you're new to my site, something to note is that I share 2 methods.
The first has step-by-step pictures, which make it easy to follow along while cooking.
The second method which is shared right after, is exactly the same, just minus the pictures.

EXTRA SUGGESTIONS
- To spice up your burger, you can add some lettuce, slaw, or jalapeños to it.
- This chicken filling is also great in wraps, paninis, sliders, and sandwiches. You can also use shredded leftover chicken and just coat it in the main sauce. Basically, I'm saying this is a very versatile sauce.
- I know from my pictures you will see chicken strips. I accidentally sliced my chicken fillet into strips. My brain was malfunctioning the morning I made this. Leave your chicken fillets whole; there is no need to cut them into strips for this recipe, unless you're using the chicken filling for a sandwich or wrap, etc.
- Now I did use "Soulfirenaise Sauce" as a drizzle sauce in these burgers. If you're not in Southern Africa, most likely you don't have a "Chicken Licken" around you, where I actually get these sauce sachets.
- If you can get some "Soulfirenaise Sauce", I highly recommend you do so, because it's delicious! I think it's just the "Soulfire" sauce mixed with mayonnaise, so if you have a bottle in the fridge, you can make your own.
- Drizzle Sauce: Any hot sauce you prefer, mixed with some mayonnaise, will do. Another option is to combine some of the Buffalo sauce with mayonnaise.
INGREDIENTS
CHICKEN
4 Chicken Fillets
1 Tbsp Red Chili Paste
1 tsp Paprika
1 Tbsp Lemon Juice
2 tsp Garlic Flakes (or Freshly Crushed Garlic)
1/2 tsp Lemon Pepper
1/4 tsp Salt
2 Tbsp Oil
MAIN SAUCE
1 Cup Buffalo Sauce
2 Tbsp Tomato Sauce
1 tsp Lemon Pepper
2 tsp Dry Parsley
2 tsp Dry Mixed Herbs
1 tsp Garlic Flakes (or Freshly Crushed Garlic)
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Freshly Cracked Black Pepper (optional)
Salt to taste
OTHER
4 Burger Buns
Mayonnaise
Margarine/Butter
Drizzle Sauce - Buffalo Sauce/Hot Sauce/ mixed with Mayo or Chicken Licken Soulfirenaise
1 Cup Grated Gouda Cheese
1/2 Cup Grated Mozzarella Cheese
Sliced Jalapeños (optional)
2 Tbsp Butter
1 tsp Crushed Garlic
1 tsp Dry Parsley
METHOD WITH STEP-BY-STEP PICTURES
1. Marinate the chicken fillet with red chilli paste, paprika, lemon juice, lemon pepper, garlic (or fresh garlic), and salt (remember you don't need to cut the chicken fillet into strips-this was a mistake on my part).
2. Heat the oil for a few seconds in your pot. Once hot, add in the marinated chicken fillets. Allow it to brown for 1–2 minutes on each side before adding 1/4 cup of water. Leave the chicken fillets to cook for 20 - 25 minutes, till done.
3. While your chicken is cooking, make the main sauce by mixing in a separate bowl the buffalo sauce, tomato sauce, lemon pepper, dry parsley, garlic flakes (or fresh garlic), garlic powder, onion powder, dry mixed herbs, freshly cracked black pepper, and salt.
4. After the chicken has cooked, and there's little to no water left (do not overcook the chicken). Pour the main sauce you just made, all over the chicken, and give it a quick mix.
5. Let it cook on medium heat for 5 minutes just so all the flavours combine with the chicken - it should be saucy when you assemble your burger.
6. Preheat your oven to 180 Degrees C when you're about to assemble the burgers. Butter the burger buns and spread a thin layer of mayo on both sides.
7. Place each cooked saucy chicken fillet on each bun.
8. Drizzle the drizzle sauce over your chicken. So that's your mayo and hot sauce/buffalo sauce mixture, or soulfirenaise.
9. Top with a generous amount of both the grated gouda and mozzarella cheese. I added more of the drizzle sauce over the cheese as well. For an extra kick, feel free to top it with some sliced jalapeños.
10. In a small saucepan, at a low temperature, heat up the butter, dry parsley, and garlic for 2 - 3 minutes, till it's all infused together.

- Generously spread the melted herby garlic butter over the top buns, before placing all your burgers on a lined baking pan.
- Now, this part I skipped, which I highly recommend you don't. Cover the burgers in foil and bake for 10 minutes. Remove the foil and bake for approximately 3 more minutes. Just keep checking that the top bun does not harden. Once your chicken is hot and the cheese has melted, it's time to serve.
