Pineapple and Mango Salsa

Who doesn't like a good salsa recipe that will have your taste buds
dancing and will hit the spot this summer?
Whether you want to have a snack of chips and salsa or you want to use the
salsa in other recipes, such as a wrap filler, this is a great way to use up
some fruits and vegetables in the fridge, and you'll see it's super easy to
make.
How To Turn A Pineapple Into A Serving Bowl
While I share how to do it in the methods below, I'd like to create
this section for anyone who wants to do it for other recipes or fruit platters.
1. Place the pineapple upright and slice straight down from where
the head starts to the bottom. Please don't waste this piece; cut off the pineapple skin and use the pineapple for the salsa or as a
prep snack.
2. Using a knife, cut around the inside of the pineapple in a
circle; next, make horizontal and vertical cuts and scoop out the
pineapple chunks.
3. Using a tablespoon, scoop everything out; don't waste any
pineapple inside. Try to leave just the shell of the
pineapple.
How Long Will The Pineapple Bowl Last?
It lasts 2 - 3 days in the fridge if you cover it tightly in cling wrap. So you can make it in advance. Just be careful; if you
have a juicy pineapple, the juice will leak out, so place it into a
bowl before covering it up, just so there's no mess in the
fridge.
Why Do I Share The Same Method Twice?
The first is with step-by-step pictures that are easy to follow, and
right after, I share the same method again, just minus the
pictures.
Having a method with images provides some visual guidance for whoever
may need it while making this recipe.
Pineapple And Mango Salsa TikTok
Ingredients
1 Pineapple (1 - 2 Cups)
1 Large Mango or 2 Small Mangos (1 Cup)
1 Medium Red Onion - diced
1/4 Cucumber - diced
1 Medium Tomato (or Handful of Cocktail Tomatoes) - diced/sliced
1 - 2 Jalapenos (optional) - sliced
1 Lime - juice and zest
Salt to taste (no more than 1/4 tsp)
Pepper to taste (no more than 1/2 tsp)
1/4 tsp Dry Parsley
Method With Step-By-Step Pictures
1. Hollow out your pineapple to use as a serving bowl.
If you know how to, or you don't want to, or you're using ready-prepped
pineapple, skip this step and the next two. With your pineapple upright,
slice straight down from where the head starts to the bottom (don't waste
this piece; cut off the pineapple skin and use the pineapple for the salsa
or as a prep snack).
2. Using a knife, cut around the inside of the pineapple in a circle. Next, make horizontal and vertical cuts and scoop out the pineapple
chunks.
3. Using a tablespoon, scoop everything out; don't waste any pineapple. Try
to leave just the shell of the pineapple.
4. Cut the pineapple chunks into small cubes and add them to a mixing
bowl. If you're using fresh pineapple, do not waste the juice, add it to the
mixing bowl.
4. Add your diced mango, onion, cucumber, tomatoes and jalapenos.
5. Next, add in the zest and juice of one lime.
6. Season your salsa with salt and pepper.
7. Finally, quickly mix and scoop it into your pineapple bowl
or serving dish, garnish with dry parsley, and serve with tortilla chips as
a wrap or crunch wrap filler.
Method Without Pictures
