I thought I would share one of the main ingredients in my kitchen,
also known as 'curry masala',
it is the base of many of the recipes I share.
I have it on hand and I personally like the idea of making it at home,
but this is readily available to purchase. 

Now this is a very easy and common recipe,
I think every family has their own version and this is my family's.
It can be made on hand if you're just making it for a specific recipe 
or you can make a bit more to store in the fridge/freezer. 
Because we use it a lot in our cooking,
so we usually make a HUGE batch 
and freeze packs so we always have some on hand.

In some of the pictures we actually used;
more than 50 bunches of fresh coriander and around 2 kgs of green chilies!
So that can give you a rough idea by how MASS of a production this was lol 



- INGREDIENTS -

2 Full Bunches Fresh Coriander
7 - 8 Long Green Chilies (remove stems)
4 - 5 Cloves Freshly Minced Garlic 
2 tsp Salt 
3 Tbsp Ground Cumin
2 Tbsp Oil

MASS PRODUCTION

  1. Now we use a mincer because the amount we make is a lot, but feel free to use a blender for a smaller amount. I personally like to blend the coriander and green chilies separately before mixing it together, because I can control how much heat goes into the paste.
  2. Once the coriander and green chilies have been blended and smooth, mix them together properly, taste if you need more green chilies till you're happy with the heat. 
  3. Next, add in your garlic, salt and ground cumin powder and mix well again. 
  4. Give another taste and make sure the heat and salt is to your liking, finally add in your oil and mix again. 
  5. Store in a glass jar in your fridge or in a container in the freezer and use when required.

MASS PRODUCTION

As you can see this is a very easy recipe to follow,
it's not complicated at all. 
Like I said you can actually even make this in a blender all together,
personally I like adding the green chilies slowly so I can control the heat,
but popping it all in the blender can save a lot more time and help with the clean up.

and yes you can buy it in the supermarket or Asian stores,
but nothing beats home-made.

  1. Though currently I buy it from supermarket, I am interested in starting to make in home once I have my own herb garden (in sha Allah!!!).

    The only thing liquidy in this recipe is oil, so if someone wants to make it a bit thinner would you recommend adding extra oil or water?

    1. Wet use to buy as well, but love making it at home especially since it's healthier, the quality is way better and we customize it to our heat preference.

      You can add more oil, just remember to not add add oil to your meat when you cook then, or it does thin out when you make a marinade and you cook with water etc so it works either way.

    1. So much more baraqah, I find also it's healthier and the quality is much better. I know not everyone can, but you can always make a small batch or just have the ingredients on hand to add to the recipe. I make the masala cause it makes cooking much faster.

  4. Wow..this is spicy...homemade is always wonderful...we add little yogurt to this and use as a dip to go with fried snacks...

    1. That's exactly how to make yogurt chutney that's served with Indian food. Yogurt + Green Chili Masala Paste + Salt = Yoghurt Chutney...A lot of people also add mint sauce to the chutney.
