Viral Döner Kebab

Döner kebab is one of the world’s most iconic street foods, with origins
tracing back to the Ottoman Empire where seasoned meat was slowly roasted on
a vertical spit. Its popularity spread across Europe, especially the UK,
where it became a late-night favourite and a comfort food classic.
I’m usually not one to jump on social media trends, but this one genuinely
stopped me mid-scroll. It looked too good to ignore, and yes, I needed to
try it my way and bump it up my posting schedule because it deserved to be
shared asap. The excitement wasn’t just mine; my dad, a
devoted döner lover, had been hinting (not so subtly) everyday, that I needed to make
it the moment it blew up online.
This viral recipe was first shared by Meze Mike, and full credit
goes to him for showcasing such a clever family method. It’s a smart,
approachable way to recreate authentic takeaway-style döner at home, without
any fuss. That simplicity has played a huge role in why the recipe is
exploding online.
The key to getting that juicy, flavourful texture lies in your choice of
mince. Even if you’re opting for lean beef, chicken or lamb,
make sure there’s some fat in the mix, around 15 - 20% is ideal. Too
lean, and the döner becomes dry; just enough fat, and you get that tender,
fall-apart finish that makes the recipe so irresistible.
I served mine with a fresh Chopped Salad and Sumac Onions (recipe coming next), both of which layer beautifully in a
warm wrap or soft pita.
I also made two classic Kebab-Shop Sauces that are usually drizzled over a
proper döner: Garlic Sauce and Red Chilli Sauce. Recipes for
both are coming to my Instagram soon, so keep an eye out.
I originally made a big batch of this döner
because, as always, my mince blindness struck again, my eyes and
hands never agree on quantity. So if you notice that the ingredient list
doesn’t perfectly match some of the photos, that’s why!
I’ve scaled the recipe down to a more manageable amount for
anyone to try at home. The bonus of a larger batch, though, is that I was able to freeze leftovers, which will be perfect for quick, no-fuss meals on
easy-going days or nights.
If you do end up with leftovers, the döner is incredibly versatile. You can
tuck it into sandwiches, scatter it over pizza or pile it high on loaded
fries for an easy, filling meal. It’s flavour-packed, adaptable and perfect

Ingredients
Doner
1 kg Beef/Steak Mince [fat ratio 15% - 20%]
1 White Onion (medium) - 1/2 - 1 Cup
2 tsp Paprika
2 tsp Chilli Powder or Chilli Flakes
1 tsp Cumin Powder
1 Tbsp Crushed Garlic
2 tsp Oregano
1 tsp Garlic Powder
1/2 tsp Salt
1/2 tsp Black Pepper
2 Tbsp Plain Yoghurt or Greek Yoghurt
2 Tbsp Lemon Juice
Salad
2 Cups Cubed Cucumber
1 Cup Cherry or Baby Tomatoes Halved
2 Cups Shredded Lettuce
Other
Sumac Onions
Kebab Shop Garlic Sauce - recipe coming soon
Kebab Shop Red Chilli Sauce - recipe coming soon
Method With Pictures
1. Add the mince to a mixing bowl. Use finely ground mince with a good fat
percentage for juicy results. If you prefer a smoother, finer texture, you
can use a chopper to grind the mince before starting. You can make this
recipe with beef, lamb, chicken, or a mix of beef and lamb. I used beef
mince only.
2. Add the drained, finely chopped onion, crushed garlic, paprika, chilli
flakes or chilli powder, cumin, dried oregano, garlic powder, lemon juice,
salt, black pepper and yoghurt. Mix everything together until the mince is
well combined and evenly seasoned.
3. Place a sheet of parchment paper on your counter and spoon 1 - 2 cups of
the mince mixture into the centre. Cover with another sheet of parchment and
press the mince down with your hands, then use a rolling pin to roll it out
thinly. It doesn’t need to look perfect.
4. Carefully peel off the top sheet of the parchment. Starting from one end, roll the mince up using the parchment underneath to guide you, creating a loose mince cigar-style roll.
5. Transfer each roll onto a baking tray. Continue rolling the rest of the
mince mixture in the same way until it’s all used.
6. Place the tray into a preheated oven at 180°C and bake for 20 - 30 minutes, checking as it cooks. If there is a lot of liquid released, you can pour it out, but it’s optional.
7. While the viral döner cooks, prepare a simple chopped salad by tossing cucumber, lettuce and baby tomatoes together in a bowl.
9. Prepare the classic Kebab-Shop Sauces. I made Garlic Sauce and Red Chilli Sauce, one mild and creamy, one thick with a kick. The recipes will be on my Instagram soon.
10. Once the döner is cooked, carefully unroll each parchment sheet and peel off the cooked mince. Crisp it up in a pan if you prefer, or leave it soft and tender. The meat should fall apart easily and stay juicy.
11. To serve, build your wrap or pita by layering the chopped salad first,
then piling on the döner. Drizzle generously with the garlic sauce and red
chilli sauce, finish with the sumac onions and enjoy.
12. For another delicious serving idea, make loaded fries by topping hot
chips with the döner, then drizzling both sauces over generously and
enjoying.
