Homemade Hamburger Helper

If you follow me on Instagram, you might remember that I recently put up a
poll on my story asking what recipe I should share next.
Homemade Hamburger Helper came out on top, and after seeing how many
of you voted for it, I knew I had to get to editing and share it.
While American food and cooking style often gets a bit of a roasting in the comment sections
online, there are handful of recipes that are simple, comforting and
surprisingly delicious. I came across this classic American dish when
I was searching online for a quick "pasta" recipe to make for the
family, naturally, I had to add some extra spice because that's just
how I like it.
This dish is easy it is to make,
and is a one pot recipe, making it perfect for busy weeknights. It's also a
fantastic way to use up a packet of beef mince that's sitting in the
freezer. Now, I like to cook my beef mince a little differently by allowing
it to cook with the spices and seasoning from the start. I find this helps
the flavours develop more deeply and gives the mince a richer, more savoury
taste throughout the dish.
Another bonus is that this Homemade Hamburger Helper
freezes beautifully. Simply portion any leftovers into freezer-safe
containers and save them for those days when cooking feels like too much
effort.

Ingredients
1 Diced White Onion
2 Tbsp Crushed Garlic
1 - 2 Sliced Green Chillies*
500g Beef Mince
2 tsp Garlic Powder
2 tsp Onion Powder
1 tsp Salt
1/2 tsp Black Pepper
3 Tbsp Tomato Sauce
2 Tbsp Mustard Sauce
2 tsp Red Chilli Powder*
2 tsp Paprika
2 Tbsp Sour Cream
3 - 4 Tbsp (50g) Tomato Paste
2 Cups Bisto Gravy (substitute with Beef Stock)
1 Cup Water
2 Cups Macaroni Pasta
1 1/2 Cups Grated Gouda Cheese
* Adjust depending on your heat preference.
Method with Pictures
1. In a large, wide, deep pot over medium heat, add in oil and allow to
heat for 1 - 2 minutes, before adding in the diced onion, crushed garlic and
sliced green chillies. Sauté for 4 - 5 minutes, stirring occasionally, until
the onion has softened.
2. Add the beef mince to the pot. Using a wooden spoon or meat masher,
break the mince into small pieces as it starts to cook, this will prevent
any large clumps from forming.
3. Immediately after breaking down the beef mince, stir in the garlic
powder, onion powder, salt, black pepper, tomato sauce, mustard sauce, red
chilli powder and paprika. Mix well until the mince is evenly coated. Cook
for 10 - 15 minutes, stirring every few minutes and continuing to break up
the mince. The beef will release its own juices as it cooks, there's no need
to drain them, as they help keep the mince tender and add flavour to the
sauce.
4. Once the mince is fully cooked, stir through the sour cream and tomato
paste until it is completely incorporated. While making this, I actually forgot to add the tomato paste, and I ended up adding it after the next step, but it should be added with the sour cream.
5. Pour in the Bisto gravy (or beef stock) and water, giving everything a
good stir. The liquid should comfortably cover the mince, as the macaroni
will cook directly in the sauce.
6. Add the uncooked macaroni to the pot and stir well so the pasta is
submerged in the liquid. Bring to a gentle boil, then cook until the
macaroni is tender, stirring occasionally to prevent it from sticking to the
bottom of the pot.
7. By this stage, the pasta should be cooked and coated in a rich, saucy
mixture. If the sauce reduces too much, add a splash of water to loosen it.
Stir in a generous handful of grated Gouda cheese and mix until the cheese
has completely melted.
8. Finish with a sprinkle of dried parsley and serve the homemade hamburger
helper immediately while hot and cheesy.
