Well this quite an a meal to whip up for Jummah lunch
and totally out of the box.
The combination of flavors in this dish is truly exceptional. 
It's made up of layers of rice, spaghetti, chicken cooked with veggies, 
mayonnaise sauce (Nandos PERinaise sauce came to my rescue)
 and topped off with fried garlic slices and green chili slices.

Because this recipe has many steps and ingredients so-to-say,
I will break down the ingredient list into each part, 
and explain everything in the method
so it's easy for anyone to follow along.



- INGREDIENTS -



- CHICKEN -

5 - 6 Chicken Fillets 
2 tsp Freshly Crushed Garlic 
1 tsp Fresh Ginger 
1 - 2 Tbsp Green Chili Paste [click here for the recipe]
2 tsp Red Chili Powder
1 Tbsp Lemon Juice 
2 Tbsp Chicken Spice 
1 tsp Salt 
1 tsp Ground Black Pepper 
1 tsp Vinegar
1 tsp Cumin Powder
2 1/2 Tbsp Soy Sauce 

2 - 3 Tbsp Olive Oil

1 Tbsp Cornflour (to 1 Cup water)

- VEGETABLES - 


1 Onion
1/3 Cup Spring Onions 
1 Small Cabbage 
3 - 4 Carrots 
1 Cup Bell Peppers 

2 Tbsp Olive Oil
1/2 tsp Garlic 
1/2 tsp Ginger
1 tsp Green Chili Paste 



  • You can use a packet of frozen stir-fry vegetables as well if you want more veggies or you want a short cut. 

- SAUCE - 

1 Cup Mayo
1 Tbsp Red Chili Paste 
2 tsp Garlic Peri Peri Sauce 


- OTHER - 

Rice
Egg Noodles (or spaghetti if you don't have egg noodles)

Sesame Seeds [garnish]
Spring Onions [garnish]
2 - 3 Fried Garlic Slices and Green Chili Slices [garnish]




- METHOD -



  1. Cut your chicken fillets into strips and marinate them in your spices and sauces.
  2. Next, heat up your olive oil and add your marinated chicken to your pot, leaving it to sizzle away for a few seconds (keep turning your meat). 
  3. After a few seconds, add around 1 - 2 cups of water, I mixed in the cornflour with the water, which will help it thicken. Leave it to cook on a medium heat.
  4. While your meat is cooking prep your vegetables.
  5. In a wok, heat up your olive oil, before adding your diced onion, chopped spring onions, garlic, ginger and green chili paste. Stir-fry for a few minutes before adding the rest of the vegetables and stir-fry them. 
  6. While your meat is cooking and your vegetables are stir-frying, boil your rice and egg noodles separately.
  7. You can also make your sauce and keep to the side. 
  8. Once everything is cooked it's time to layer it all evenly. Layer your rice at the bottom of a platter, next layer your boiled noodles over the rice, next add your stir-fried vegetables over the noodles and lastly add your meat over the vegetables.
  9. Next, drizzle your mayo sauce over the chicken, serve the sauce on the side so everyone can top up for themselves when the dish out. 
  10. Finally, garnish with sesame seeds, the fried garlic and green chili slices and spring onions.

it may have a few more steps but it tastes delicious and is totally worth it!

  1. Be careful with soy sauce. Most have alcohol (1.5-2%~). A similar alternative, without alcohol, is Bragg Liquid aminos: https://bragg.com/products/bragg-liquid-aminos-soy-alternative.html

    1. I'm very blessed where we live you get halal certified soy sauce, so I've never had an issue finding one I could use in my cooking. But thank you for sharing this comment, I'm sure it will be very helpful for others who cannot get a halal certified soy sauce etc.

  2. Be careful with soy sauce please! It has a very high alcohol content. A good alternative is Bragg liquid aminos: https://bragg.com/products/bragg-liquid-aminos-soy-alternative.html

  3. My mother makes Singaporean Rice often. I've made it myself once. It's quite delicious, although what I do after adding the layer of rice and spaghetti, I add the sauce. Also on top of the dish along with the green chilli slices and sesame seeds, I add a few bits of crunchy noodles or pieces of fried samosa ki pattis to add an additional crunch
