Garlic Butter & Green Chilli Paratha

Monday, November 23, 2015

It's super easy and tastes amazing,
goes well with a lot of recipes (grills & curries usually)
such as:

Manchurian Chicken

With the green chilli in the recipe,
it gives a kick to the otherwise normal recipe.

Recipe credit to Nazrina Joosub from Treasury Foods.

INGREDIENTS

1 1/2 cups flour
1 1/2 tsp baking powder
1 Tb full butter
1 tsp salt
1/2 cup milk
Yoghurt (around 1/4 cup or around less)
Green Masala (freshly chopped coriander & ground green chillies)

  •  Mix all the ingredients together, be careful when adding the yoghurt add them slowly. When it comes to green masala add 1 - 2 tsp depending on how you like that.
  • Knead the dough very well and make small balls.
  • Allow to stand for 1 hour.
  • Roll out slightly thick and fry in a medium heated pan like you would for rotis, chapatis or tortillas.

100g butter
diced garlic
chopped fresh coriander

  • Heat up the above 3 ingredients.
  • Brush over the hot parathas after taking them off the pan right away.
  • Serve hot.

  4. I don't like garlic and don't usually cool with them. The strange thing is I can eat it when I go out for a meal lol and I know it makes food tastes much better or at least that's what I think.

  10. I have never had this kind of bread before. It looks very tasty and it's interesting that you put yoghurt in the dough.

    1. I was a bit skeptical myself when I saw yoghurt was the ingredient, but it got such good response from people who had tried it that I gave it a shot and it tasted really nice.

    1. I think the key is adding ingredients in slowly and kneading is really important. It should be in between soft and hard, and also to give it some resting time when you finish kneading and covering it in a dark place.

Just got confused at two points
    1. Do you add a little oil or butter when frying it?
    2. What is the ideal thickness because mine turned out to be naan thick

    1. Yay that's awesome Masha-Allah :)

      1. If you have fried or cooked rotis or parathas before than yes you can use a little oil/butter/ghee when it's close to cooked to bring a nice golden color. Spray your pan before you cook on it, cook both sides, keep turning it constantly so it cooks evenly. When you see it's close to golden brush over with oil or butter or ghee and flip it, do the same to the other side and than remove of the heat.
      2. With this recipe it is suppose to be thick, so if yours came out thick that's okay - see in the side shot picture mine's was thick as well :)
