Ah Spring is upon us, 
well if you're from my side of the world you know what I'm talking about. 

To me scones are a perfect bake to serve with tea or for breakfast,
basically, anytime is tea time if you have some freshly baked scones on the table
which you can never really go wrong with. 

Whether you're having a light afternoon tea outside enjoying the warm weather,
or you're on the other side of the world and it's getting a bit chilly,
scones are always a crowd pleaser.

- INGREDIENTS - 


2 Cups Plain Flour
1/2 Cup Sugar
4 tsp Baking Powder
4 Tbsp Butter - Frozen

1 Egg 
250ml Milk 
1/4 tsp Vanilla Essence

1 Egg - beaten [egg wash]

- SERVE WITH -


Butter
Cheese
Whipped Cream
Fresh Strawberries
Strawberry Jam

- METHOD - 

  1. Pre-heat the oven at 200 Degrees C and lightly grease your baking tray.
  2. In a large bowl, sift in your plain flour, sugar and baking powder. 
  3. Next, cut or grate in your frozen butter, this will make it easier to work with.
  4. In a smaller bowl, mix together your egg, milk and vanilla essence.
  5. Stir your wet ingredients into your dry mixture and slowly fold in.
  6. Turn your dough onto a lightly floured surface and briefly knead till it forms a firm dough. DO NOT OVER KNEAD, IT'S OKAY IF THE DOUGH DOESN'T SEEM SMOOTH LIKE A BREAD OR PASTRY DOUGH WOULD.
  7. Using your hands pat down the dough till it's around 1 - 2 inch thick. 
  8. Flour down your cookie cutter and cut out your scones from the dough. DO NOT WIGGLE the cookie cutter into the dough a lot and try to keep your hands as light as possible during this process.
  9. Place your scone cut outs onto the baking tray and light egg wash just the tops of the scones.
  10. Pop the baking trays into the oven and bake for 10 - 15 minutes, till they're golden. 
  11. Finally, once they're done, remove from the oven and leave to cool for a few minutes before dusting them with some icing sugar. 
  12. Serve as is or with any of the suggested options, and the scones can be stored in an airtight container.
