I went a little bananas for banoffee puff tarts lol
Lock-down has everyone snacking A LOT!
Being a person who isn't a banana fan,
I did actually enjoy this yummy dessert,
however if you're like me you can just switch out the bananas with
strawberries,
which I will be doing next time.
I actually saw a friend of mine make this on snapchat and I had to give it
a try.
It's super easy and quick to make!
I think kids will especially love it and it goes so well with
ice-cream.
Please remember the quantities of the ingredients depend on how much you
want to make.
I used individual puff pastry cutouts which I had leftover from
Ramadan pie preps,
you can use the same as well which to be honest I find way better when
serving,
or you can use one big puff pastry square,
it depends on how many people you will be serving actually and what you
have.
Also due to the lock-down I couldn't get my hands on
canned whipped cream,
which is why I made it at home with fresh cream, icing sugar and vanilla
essence.
The method down below has the step by step pictures,
but you can also scroll right to the bottom and see the whole method
without pictures which will be easier to screenshot.
- INGREDIENTS -
Puff Pastry
Egg
1 tin (360g) Caramel Treat
Bananas
Canned Whipped Cream
or
250ml Fresh Cream or heavy cream or whipping cream
3 Tbsp Icing Sugar
1 tsp Vanilla Essence
Milk Chocolate - grated
1/2 tsp Icing Sugar
- METHOD -
1. Pre-heat your oven at 200 Degrees C.
2. Layer your puff pastry on a greased baking tray and lightly egg wash
them (This will help turn golden when baked).
3. Pop them into the oven for around 20 minutes till golden, leave to cool
when done.
4. Once they've cooled, use a sharp knife to cut the pastry in half.
5. So I used tinned caramel treat, which I whipped it till it was smooth
enough to spread and drizzle. 1 tin was more than enough, I used the left
over to drizzle over the banoffee puff tart just before serving.
6. Lightly smear the caramel treat over the base of the puff tarts that you
had sliced in half.
7. Over the caramel add your sliced bananas. Only slice your bananas when you're at this step, also I just made 5 individual banoffee puff tarts, so one banana was enough for me, feel free to use more.

8. Next, generously top with whipped cream, drizzle some caramel and grated chocolate.
9. Finally pop on the lid, dust with some icing sugar. You can keep it in the fridge to chill, however take it out of the fridge around 10 minutes before you want to serve it.
