Tiramisu Cupcakes

This cupcake is to die for! 
I love cream-cheese icing and mixed with the coffee it's super yummy.
We actually want to try this on a cake and see how yummy that turns out.

Literally before posting this I changed the cupcake batter recipe,
the one that came with this recipe flopped two times!
Each time I re did the cupcakes using a basic sponge cake recipe,
I couldn't risk posting the recipe with a batter that kept flopping for me.

You can use this new, easy and flop proof cake batter recipe,
or any sponge cake recipe that you are comfortable with.


CUPCAKE:

4 eggs
1 cup sugar
1 1/4 cup flour
3 tsp baking powder
1 tsp vanilla essence
1/2 cup oil
1/2 cup boiling water


  1. Beat eggs and sugar till fluffy.
  2. Add 1/2 cup oil and beat again.
  3. Then add the dry ingredients, 1/2 cup water and vanilla essence.
  4. Don't over beat.
  5. Bake at 180 degrees for 30 minutes. 


COFFEE MIXTURE:

125 ml Boiling Water
1/2 cup Castor Sugar 
2 Tb Coffee

  • Mix together and leave aside.
  • Once the cupcake as finished baking, leave to cool and then prick with a fork in 3 or 2 separate places on top of the cupcake.
  • Pour 1 dessertspoon or around 1 1/2 teaspoon of the coffee mixture on each cupcake into the holes you made, you may add a bit more if you would prefer, just be careful not to add too much or it would be too soggy. 


CREAM CHEESE ICING:

125g Butter
2 Cups Icing Sugar
1 Tb Vanilla Essence 
1/2 Tub Cream Cheese 

  • Beat the butter and icing sugar well.
  • Add vanilla essence and cream cheese and beat again.
  • Pipe onto the cupcakes, dust over with cocoa powder and serve.

  1. When I come across your blog, I am always getting hungry :D I have no idea what Castor sugar means. Is this a kind of sugar substitute? Or does it mean an extra fine sugar as you put it into the coffee mixture? I like about the cupcakes that there are no fancy ingredients and the outcome seems to be great. I should spend more time in the kitchen :) Always a pleasure to read your blog.

    1. Hehe let's just say blogging makes me snack a whole lot more! Well castor sugar is widely known in Southern Africa and Europe, not sure of the Asian side of the world, and it's not so common in the USA.
      It is an extra fine sugar, close to being powder. You do get it sold separately in the supermarket, if not you finely grind up normal super till its super fine that works just as well. I also prefer easy baked goodies since I'm not the greatest baker. Jazakallah so much :) I really appreciate your sweet comment :)

  2. These tiramisu cupcakes look gorgeous. My husband loves anything that has coffee in it, though I am not a huge fan! I will buy some of these for him on his birthday again this time, like I did last year! :D

  6. I love these ! Not only do they look yummy but so easy to make that too made with just a hand full of ingredients I usually have on hand Would love to bake these and try them out

    1. It's quick to make as well, because you can use a normal sponge cake recipe you're comfortable and the frosting is different :) Thank you so much!

      Omw this just goes to show how I really need to proof read my posts more!

      When you make the coffee mixture. Keep in a cup or small jug (I will say you can make half the recipe because there is a lot left over). Take your cupcake and make some holes on top, I use a fork and I make 6 holes all together.
      Next, take a spoon-full of the coffee mix and pour into the holes, make sure you don't pour so much that the sponge becomes super soft.
