Smash Potatoes

I've made smash potatoes quite a few times. It's definitely a family go-to, especially since it's so easy to make and seemingly pairs really well with most dishes.

I tend to like to stick to the usual herb marinade I make because I find it's packed with flavour and it compliments any dish I'm serving it with. Yes, it may look like Sherk's swamp water, but trust me it's delicious.

The only thing I really do change up is the way I cook my smash potatoes and it always depends on how much time I have. Recently, I've been pan-frying them or air frying them and I found they come out much crispier and cook faster, than when grilled in the oven. I do not add any extra oil when I do pan fry or air fry them, because, the herb marinade has the right amount.

Creamy Potatoes Au Gratin Side Dish

Ah the humble potato,

so many ways to cook and serve it.

This is a great side dish recipe to have to serve along side any meal.

It's one of those great comfort food side dishes,

that's perfect for this cold weather.

Potatoes au gratin is a dish that originates from France,

there are many ways to make it, with little differences in each recipe,

but this is my simple version.

- INGREDIENTS -

4 - 5 Potatoes
Pinch of Salt

2 Onions
2 - 3 Tbsp Olive Oil

1 Tbsp Chicken Spice
1 tsp Pepper
1/2 tsp Salt
1 Tbsp Dry Thyme (or a few sprigs of fresh thyme)
1 Tbsp Mixed Herbs
1 tsp Garlic Powder
1/2 tsp Aromat (optional)

250ml Fresh Cream
1 Cup Grated Gouda Cheese
1 tsp Dry Parsley [garnish]

Give a quick boil in hot water seasoned with a pinch of salt for 4 - 5 minutes.
Next, thinly slice your onions.
In a baking pan or skillet pan heat up the olive oil and once it's sizzling add your sliced onions, salt, pepper, chicken spice and thyme.
Drain your potatoes and once your onions have softened and become golden, add your potatoes into the pan and toss everything together, making sure it's all mixed together.
Pour over your fresh cream and grated cheese.
Pop your pan into a hot oven 200 Degrees C and grill for 5 - 10 minutes, turn the heat down to 180 Degrees C.
Keep in the oven till the cheese has all melted and it's bubbling away. If the fresh cream is too much, keep in the oven for longer, so it's not so saucy and it's a bit thicker.
Serve hot and enjoy!
