BBQ Chicken & Veggie Kebabs

My family loves braai! 
Braai is the South African name for BBQ. 
Now we usually have one every Saturday,
and we switch it up from chops and chicken 
and thought it would be nice to try some chicken and veggie kebabs on a stick. 

It came out so amazing!
It had a smoky bbq'd taste to it which was achieved by making the fire with wood,
the smokiness transferred through to the meat and veggies 
which made them taste so amazing. 
but whatever it is this recipe was a knock out and a definite repeat. 


INGREDIENTS

Salt
Machacho Dry Spice (mild)
Red Chillies Powder
Crushed Fresh Garlic
Olive Oil
Tomato Sauce
Peri-Peri Sauce (hot)
Dried Coriander
Lemon Juice
Garlic Sauce
Turmeric 
Robertson's Bbq Spice 

Red, Green and Yellow Peppers (cut into squares)
Onion Cubes or Chunks (use red onions if you have a choice they come out sweeter when cooked)
Baby Garlic Potatoes (sliced in half)


METHOD

  1. Take your chicken fillet and cut into strips. 
  2. Marinate the chicken strips in the first half of the ingredients (spices and sauces) for a couple of hours or best over night. Remember to make a little more marinade as this will be used later. 
  3. Spray the skewers that you are going to use with Spray and Cook or rub them down with a bit of olive oil so the meat and veggies do not stick to them when being bbq'd/braai'd.
  4. Tread a chicken strip, pepper, potato, onion and repeat.
  5. Make sure you add meat in between the veggies so the flavours can mix well when on the fire. 
  6. After all the meat has been skewed, with the left over marinade add either ghee/olive oil/butter as this will be used to baste the meat and veggies when they are on the stand. 

READY TO PUT ON THE FIRE!

  2. I love any meat on a stick - cooking and eating it. This veg/chicken skewer looks so tasty and seems like it could partner up with my tikka recipe :-D. I haven't heard of a couple of the spices on here, but I'm looking forward to learning more about them.

    1. It's nice to pair meats with veggies. The different flavours fuse together and also it's a great to have variety on your plate. Some of these spices are well known in Southern Africa, you may not find them in your supermarket, but you can check online to purchase - a little does go a long way.

  3. It looks very delicious. The photos had me salivating. I love hot peri peri sauce. Did you eat the kebabs with extra peri peri sauce on top? Yum!

    1. Yes, we used the extra marinade to baste the skewers while they were on the bbq/braai stand. So it's not so dry when you eat it. And if you can imagine the kick in your mouth from the hot peri-peri sauce lol but obviously others cause use the other medium heat sauces if they don't enjoy extremely hot foods.

  4. This looks soo good mashaa allah. I have bookmarked it to try very soon but what is a Machacho Dry Spice? is there a way to make it yourself by adding spices together or is there is good substitute.

    1. It's a Mexican branded spice. If you cannot find it in your supermarket, or cannot buy online, you can try any mexican spice, they come in different flavours and also you can choose how hot you want it. If you still can't find it or find a substitute, you can use any chicken, chilli dry spice. I hope this helps :)
