Lays Chips Chicken

This was such an odd combination using packet chips when making chicken,
but to be honest it came out amazing. 
I would say this dish is a twist on the Fried Chicken, 
gives a different crunch especially if you're tired of good old breadcrumbs,
and no deep frying. 

You can use any flavour packet chips you want. 
Also the brand doesn't have to be lays it can be simba, 
or really whatever you prefer using. 
The flavour as well is up to you,
because we made this for the first time we played it safe,
and used Lays Lightly Salted (yellow packet),
but next time we want to try another flavour.

*Please note when using spices be very careful, 
all spices have salt already in them, 
so over using them to making a huge marinade can make it very salty,
keep tasting along the way to be on the safe side,
and add the salt last if it does need any*


INGREDIENTS


1/2 kg Chicken Fillet 
1/2 cup Lemon Juice 
2 Tb Mayonnaise
1 tsp Salt
1 tsp Ground Cumin
Ground Green Chillies (to taste depending on how strong you want it).
2 Tsp Aromat
1 tsp Lemon Pepper
1/2 tsp Fresh Black Ground Pepper

1 Large Egg, beaten 
2 (or 3 ) small packets Lays/Simba chips, crushed *any flavour*
Oil - for frying 


METHOD

  • Slit the sides of the fillets in half to form 2 thin fillets out of 1. 
  • Mix the following ingredients together: lemon juice, mayo, cumin, garlic, aromat, green chillies, lemon pepper and black pepper.
  • Add the marinade to the fillets and mix well.
  • Place in the fridge and leave to marinate for a couple of hours, we left it to marinate overnight.



  • Next, dip the fillets into the egg,
  • Then, completely coat them in the crushed chips.
  • Shallow fry using any oil you prefer (olive oil) in a non stick pan, and turn once only when golden brown on both sides.




  • Serve with salad, or you can place in a burger, add some sauce and lettuce and you have a crunchy burger.

      1. Shuran :) It's simple:
        Shredded lettuce
        Cubed cucumber
        Cubed carrots
        Drizzle with some lemon juice or preferred salad dressing :) and serve chillded
