Who else likes watching Jamie Oliver's 15 minute meals?
I love having it on in the background while I do other things, 
his quite fun to watch and his meals sometimes inspire me when I cook. 

I watched a episode where he made fried cajun chicken with sweet potato mash and salad,
I decided to bring my own twist to the meal and make,
 grilled cajun chicken with sweet potato mash.

Sweet potatoes are my fave and they're much healthier than regular potatoes. 
If you haven't tried 'sweet potato mash' 
you have to!
I was a bit hesitant but it tasted delicious, 
and I think it compliments any main dish beautifully.



- INGREDIENTS -

1 Disjointed Chicken 
1 Tbsp Red Chili Paste 
1 tsp Red Chili Powder
1 tsp Smoked Paprika
3 Tbsp Cajun Spice 
2 tsp Crushed Garlic  
1 Tbsp Tomato Paste 
2 Tbsp Lemon Juice 
2 - 3 Puree Tomatoes (250ml)
1 tsp Salt
2 tsp Pepper 
1 Tbsp Coconut Oil

5 Sweet Potatoes [depends on the size]
1 tsp Ground Pepper 

Dry Parsley [garnish]
Fresh Coriander [garnish]




- METHOD -

  1. Marinate your chicken in the above spices before adding it to a baking pan. 
  2. Add some water and grill at 200 degrees c for 30 minutes before turning down the heat to 180 degrees c for the next 30 minutes. 
  3. Make sure the gravy doesn't dry out as the chicken cooks, you can add more water if your chicken needs more time to cook. 
  4. While your chicken is cooking boil your sweet potatoes till soft and mash them till they're smooth, add some pepper to the sweet potato mash and garnish with dry parsley. 
  5. When your chicken is done garnish with fresh coriander and you can also serve with a fresh salad.
