Creamy Feta Sauce

This recipe came about because I had a large tub of feta I wanted to start
using up, and there's so much salad a person can make. But I also saw some
feta sauce/dressing recipes online and I decided to come up with my own
version.
It's super easy to make, literally, it's a 2 step process if you count just
prepping the ingredients. I did add chillies because I prefer the sauce have
a bit of a kick to it, especially if I want to use it in multiple other
recipes.

FAQ
HOW MUCH DOES THIS RECIPE YIELD?
This recipe actually yields approximately 500ml of sauce (2
cups).
HOW LONG DOES IT STORE IN THE FRIDGE?
It can store up to 1 1/2 weeks in the fridge if stored in an airtight
jar.
CAN I USE FLAVOURED FETA OR OTHER HERBS?
Yes, this can elevate the flavour of the sauce. There is delicious
pepper-infused feta that could work really nicely in this
recipe.
I will also suggest switching up the herbs depending on your
preference. It is best to use fresh herbs, but you can substitute with dry herbs
depending on what you have available.
DIFFERENT WAYS TO USE THE SAUCE?
I find this is one of those sauces that can be used in many ways and is
great for meal prep. It pairs really well with vegetables, I do however have
a few side dish recipes coming out that I've used with this sauce. It also
makes for a great salad dressing, which is perfect to liven up any basic
salad.
I also previously shared a smash potato recipe (click here) and I used this
sauce as a topping when I served it.
INGREDIENTS
2 - 3 Discs of Feta
1 Cup Fresh Cream
1/4 Cup Sour Cream
Pinch of Salt
1/2 tsp Freshly Cracked Pepper
1/2 tsp Red Chili Flakes
Juice of 1 Lemon
Zest of 1 Lemon
2 Crushed Garlic Cloves
1 Tbsp Dry Mixed Herbs
1 1/2 Cups of Fresh Parsley - handful (or 2 - 3 Tbsp Dry Parsley)
2 Fresh Green Chilies (adjust depending on your heat preference)
1 - 2 Tbsp Olive Oil
METHOD
1. Add the ingredients into a blender or food processor, besides the olive
oil, and blend.
2. Once it's all incorporated, slowly pour in the olive oil and continue
blending till it's smooth. It should be a semi-thick consistency. If you'd
prefer a thinner sauce, you can add a little water or more fresh cream to
thin out the sauce.
