Yes, today is my birthday, Alhamdulillah (Praise God), and what
better time to share my go-to pancake recipe.
If you know me, you know I LOVE breakfast! It's my favourite meal of the day and I love mixing sweet and savoury
together for the perfect breakfast. Not only are these pancakes
delicious for Sunday brunch, but you can also whip them up for some
breakfast for supper.
They come out super light and fluffy. I've made them
using both white flour and brown flour before (you'll see from
the pictures in the method, some of the pancakes are made with brown
flour). The milk may need to be adjusted depending on the flour, so you
may need a little more. However, in the end, for your batter, the consistency should be semi-thick. This recipe makes around 8 - 10 pancakes, but it does depend
on what size you make them.

INGREDIENTS
1 1/2 Cups Cake Flour
2 Tbsp Sugar
1 Tbsp Baking Powder
1/4 tsp Salt
1 1/4 Cups Warm Milk
2 Tbsp Melted Butter
1 Egg
1 Tbsp Vanilla Essence (add to your heart's content lol)
1 - 2 Tbsp Oil or Butter
Icing Sugar
Berries of Choice
Golden or Maple Syrup
Whipped Cream
Melted Chocolate
METHOD WITH PICTURES
1. In a medium-sized bowl, mix all the dry ingredients: flour, sugar,
baking powder, and salt.
2. Next, add the wet ingredients. You can mix the milk, butter, egg, and
vanilla essence separately and then pour them into the bowl with the dry
ingredients, or add them one by one into the bowl with the dry
ingredients.
3. Whisk the mixture just until everything is incorporated. The
consistency should be semi-thick and smooth. It should not be watery, you
want to be able to pour the batter onto the frying pan or skillet easily,
but for the pancake to also hold its shape.
4. Heat up a frying pan or skillet on medium-high heat and add the oil or
butter. Once hot, using a ladle, scoop up some batter and pour it onto the
pan, using the bottom of the ladle to spread the batter into a
circle.
5. Cook for 1–2 minutes on one side. You'll notice the edges starting to
crisp up. At this point, gently flip over your pancake and cook for
another 1–2 minutes, before removing it once both sides are nice and
golden. Depending on what size pancakes you make, you should have around 8
- 10 with this recipe.
6. Before serving, dust your pancakes with some icing sugar and serve
with berries, whipped cream, melted chocolate, and golden or maple
syrup.
METHOD WITHOUT PICTURES
