Spicy Korean-Inspired Vienna Sausage Stir-Fry

Brunch lovers, this one’s for you! With Independence weekend giving us the perfect excuse to slow down and indulge, this recipe is just what you need to elevate your brunch table. If you know me, you’ll know brunch is my love language, and this dish has quickly become our ultimate Sunday brunch favourite at home. It’s comforting, flavour-packed, and brings just the right hint of heat to wake up your taste buds. Honestly, it ticks all the boxes for the perfect brunch recipe.
This stir-fry is incredibly easy to make, with minimal prep and a cook time
of under 20 minutes. It’s perfect served hot straight from the pan, but also
freezer-friendly for meal prep. Just portion into ziplock bags, freeze and
reheat on the stove for 1-2 minutes when ready to enjoy.
While it’s a brunch must-have, it’s just as versatile for lunch or dinner.
Serve it over rice, tucked into wraps, tossed with noodles, layered on a
pizza, or even stuffed into a calzone; the options are endless.

Ingredients
2 Tbsp Chilli Oil (can use regular oil)
18 Cocktail (mini) Vienna Sausages
1 Large Green Pepper
1 Small Purple Onion
1 - 2 Green Chillies
1 tsp Grated Ginger
1 tsp Crushed Garlic
1/4 Cup Soy Sauce
3 Tbsp Tomato Sauce
2 Tbsp Tomato Paste
4 Tbsp Sriracha Sauce
1 tsp Brown Sugar
Pinch of Salt
1/4 tsp Cracked Black Pepper
1/4 tsp Red Chilli Flakes
1/4 tsp Vinegar
1/2 tsp Grated Ginger
1/2 tsp Crushed Garlic
1/2 - 1 Cup Water
Chopped Spring Onions - garnish
1 tsp Sesame Seeds - garnish
Method With Step-by-Step Pictures
1. Start by prepping your ingredients. Slice the vienna sausages into
small rounds; cocktail-style Viennas work particularly well for this
recipe (which is what I used).
2. Next, slice the green pepper into thin strips, the onion into
half-moons, and the green chilli into rings.
3. In a small mixing bowl, combine soy sauce, tomato sauce, tomato paste,
sriracha, brown sugar, salt, black pepper, red chilli flakes, vinegar,
garlic, and ginger. Stir well and set aside.
4. Heat chilli oil (or regular cooking oil) in a wok or large frying pan
over medium heat for about 1 minute, then add the sliced vienna
sausages.
5. Fry the sausages for 2 - 3 minutes until they are lightly
browned. Add the sliced green pepper, onion, garlic, ginger, and green
chilli. Stir-fry for an additional 2-3 minutes, until the vegetables begin
to soften.
6. Remove the Vienna sausages and vegetable mixture from the wok. Pour
the prepared sauce into the same pan, add 1/2 to 1 cup of water (the more
water you add, the saucier it will be), and let it simmer and thicken for
3 - 4 minutes.
7. Add the Vienna sausages and vegetables back to the wok and stir well
to coat everything evenly in the sauce. Simmer for another 2 - 3 minutes
to allow the flavours to combine.
8. Garnish with chopped spring onions and sesame seeds. Serve hot!
