If you've ever watched Friends, you will remember the "Unagi" episode. Now,
while Unagi does mean "Eel," rest
assured there's no eel in this recipe, and so no eel was harmed in
making this sauce.
I am back with another sauce recipe because you can never have
too many sauce recipes. Unagi Sauce is also known as Eel Sauce, it is a sweet and salty sauce
used in Japanese cuisine to accompany Eel dishes. This sauce perfectly pairs with sushi, sushi
bake (recipe coming next), dumplings, grilled fish, stir-fries,
etc.
It was easy and quick to make. This recipe yields around 1/2 cup of sauce, which can be stored in the fridge for up to 2 weeks, in an airtight container/bottle. However, the sauce reduces in quantity while boiling, so double the ingredients
before cooking if you need more.
What Makes This A Halal and Non-Alcoholic Recipe?
Eel or Unagi Sauce commonly contains Mirin, which is a type of rice wine commonly used in Japanese cooking. It
commonly has a low alcohol content and a higher sugar content. However, it
is not the same as rice vinegar. As mentioned, Mirin is sweet and contains
alcohol, whereas rice vinegar is sour and acidic and has no alcohol.
So, this Eel Sauce (Ungai Sauce) recipe has no Mirin and is Alcohol-Free.

Ingredients
1/4 Cup Rice Vinegar
1/2 Cup Soy Sauce
3/4 Cup Brown Sugar
1 Tbsp Crushed Garlic
1 Tbsp Grated Ginger
1/4 tsp Cayenne Pepper
Method With Step-by-Step Pictures
1. Add all the ingredients into a saucepan and bring it to a boil on a
medium heat.
2. Keep stirring every few minutes, and be patient; it takes
time.
3. Once it starts to bubble, it will turn thick and glossy, and that's when
you know it's done.
4. Pour the sauce into a bowl and let it cool. Serve chilled. It can be used
as a dipping sauce for sushi, a sushi bake (recipe coming next), dumplings,
grilled fish, a stir-fry, etc.
