Chilli Chicken & Noodles

So I got this recipe from Cosmopolitan Cuisine IV
by Mariam Mahomedy.
I love all her recipes and I am a huge fan!

INGREDIENTS
1/2 kg chicken fillet (cubed)
1 tsp freshly grounded ginger
1 tsp freshly crushed garlic
1 tsp salt
1/2 tsp pepper
6 Tb soya sauce
1 egg (beaten)
1/4 cup tomato sauce
1/2 cup cornflour
Oil for deep frying
- Combine all the ingredients and marinate the chicken for 1 hour.
- Deep fry the chicken in batches in medium hot oil until golden brown.
- When golden remove from the oil and place on a paper towel.
SAUCE
Less than 1/4 cup oil
1 large onion (chopped)
1 medium green pepper (cubed)
1 medium red pepper (cubed)
1 tsp crushed garlic
1/4 cup chilli sauce - can be any brand you prefer
4 Tb soya sauce
1 1/2 cups tomato sauce
1/4 tsp Robertson's zeal
1/2 cup fresh spring onions (chopped)
- Heat oil, fry the peppers and remove with a slotted spoon.
- Next, fry onions and garlic until soft.
- Stir in the sauces, zeal and cook for a few minutes.
- Add the chicken to the sauces and mix well.
- Bring to a simmer for 6 - 7 minutes.
- Lastly add the fried peppers.
- Garnish with spring onions.
- Serve with noodles or rice.

what is Robertson's zeal?
You can down the spices a bit, I know children who are not use to spicy food may find it a bit too much, so you can put to the amount you prefer. Robertson's is a spice brand, zeal is the spice. It's a white powder which you can find in your spice department, maybe not in the Robertson's brand.

ReplyDeleteIf you don't have the zeal, can u substitute it with something else? We don't get a lot of the African spices in Canada.

Wasalam, I know most spices cannot be found worldwide, that is why I try and find substitutes for them. With zeal, there is no substitute, but you can leave it out completely and the taste won't be any different, I have tried it with and without zeal because I had run out so don't worry about it that much if you cannot find it where you are.
