Fig, Pistachio and Honey Sponge Cake Recipe

So if you know me you know me you know I NEVER bake lol
But for some reason I saw figs in the fridge and I was inspired to make something.
I also wanted to surprise my mummy for my birthday Alhamdulillah (Praise To Allah).

I kind of rolled with it and came up with this yummy cake.
I hope this cake inspires you,
if you have a go to sponge recipe go with that,
trust me that's what I do.
Also I did 2 split pans and I had extra batter left so I made
mini versions of the cake but in cupcakes.
- SPONGE CAKE INGREDIENTS -
125g Butter or Margarine (softened)
250ml (210g) Castor Sugar
4 Extra Large Eggs (separated)
5ml Vanilla Essence
500ml (280g) Cake Flour
10ml Baking Powder
1ml Salt
120ml Milk
80ml Water
5ml Cream of Tartar

5ml Cream of Tartar
45ml Fig Pulp
- CREAM ICING INGREDIENTS -
250ml Fresh Cream
1/2 Cup Icing Sugar
1 Tb Vanilla Essence
- TOPPINGS -
Fresh Figs
Honey
Crushed Pistachios
- METHOD -
- Cream the butter and sugar together.
- Next, add yolks; one at a time, beating well after each has been added, until it is light and fluffy.
- When fluffy, add the vanilla essence and fig pulp.
- Sift flour, baking powder and salt together, before adding it to the butter and sugar mix.
- Also begin to add milk and water slowly as it mixes.
- In another bowl, beat the egg whites with cream of tartar, until stiff peak stage, and fold in lightly into the creamed mixture.
- Turn out into 2 greased 20cm round cake pans (or one large cake pan).
- Baked in a preheated oven at 180 degrees for around 30 minutes.
- While the cake is cooling, whip your cream.
- If you use one big cake pan ice the top of your cake with the cream, if you use 2 split pans ice the middle of the cakes and top with crushed pistachios.
- On the top of the cake; add some figs, crushed pistachios and drizzle with honey.

Oh yum! You went wild hey... cupcakes too. They're totes Instagrammable! DeleteMashaAllah!The cake looks so inviting... need to find some fresh figs now to try this out. Btw, was just wondering can i use a ready vanilla cake mix and just add in the fresh fig pulp? Will I get same results?
ReplyDeleteThank you so much, you can also use the tin fig in syrup mix if you can't find fresh figs. I think you can use a vanilla cake mix with the fresh fig pulp as well :P
