Spanish Rice (Friday Lunch)

The week goes by so fast,
Friday to Friday comes and it gets so hard to come with a new dish for lunch!
This is my favorite rice dish and it's super easy and quick to make. 
It's defiantly different from the biryani or akni or dhal. 



INGREDIENTS 

Chicken fillets (cubed)
Chopped onions 
Cumin (whole)
Salt
Green chutney (green chilies and coriander)
Red chili powder
Lemon juice 
Mixed Vegetables 
Tomatoes (liquidated)
Boiled rice


METHOD

  1. Braise the onions with ghee (clarified butter) or olive oil with whole cumin.
  2. When golden; add the chicken cubes with the salt, green chutney, red chili powder and lemon juice.
  3. Top with a little water and cook for a bit. 
  4. Next add the mixed vegetables (you can use frozen ones or if you have fresh veggies in your fridge use those).
  5. Cook till done. 
  6. Add the liquidated tomatoes (one or 2 depending on how much you're making), cook a little more but don't over cook. 
  7. Top with boiled rice and mix well.
  8. Give a steam. 
  9. Serve with dhai and a light relish. 

DHAI - sour milk, green chutney; whip well!

LIGHT RELISH -  yogurt, green chutney, cubed cucumber, cubed carrots, cubed colorful peppers; mix well and serve cold.

  1. Looks lispmacking! So true... it is difficult for me as well to think what to cook every Fridays, sometimes I just go back to our basic ghee rice-chicken curry combo and then the kids tell me, "Y no biriyani?" :)

    1. Yeah it gets hard to try and switch it up and usually Friday has to be a rice dish in the traditional sense, my family loves to try new rice dishes and the kids will love this, its very light as well and healthy.

  6. I love rice in any form.. but we have it so rarely.. and Fridays. I tend not to cook at all! :-P. neat and easy recipe.. and that plate is good one!

    1. Ah so lucky! By us every Friday has to be some kind of rice dish, but now that time flies by it's hard to keep switching it up so now we have to experiment. I thought this would be a good recipe to share for anyone to try lol when you do cook it give this recipe a try it's so much easier and lighter than the heavy traditional rice dishes lol
