Healthy Saucy Baby Vegetables Side Dish

This is one of my favourite ways to serve my vegetables, and my aunty actually has a similar recipe, which inspired me to come up with my own version.
I actually made a TikTok video making this, which you can find on my Tiktok, and I also share the videos on my Instagram.
This is a great healthier alternative to serving vegetables instead of adding fresh cream and cheese. This side dish can be served alongside some saucy chicken, but it mostly goes well with steak or mutton. With this recipe, you can also use it as a base for your stir-fry, adding soy sauce to the ingredients.
If you would like to save some time, you can use a pre-packed and prepped packet of vegetables, which can be found in the supermarket's frozen/fridge aisle. However, if you want, you can use fresh vegetables that are seasonal or even what you have in your fridge/pantry.
- INGREDIENTS -
- VEGETABLES YOU CAN USE -
Whole Corncobs (cut in half)
Baby Corn
Baby Carrots
Cubed Butternut
Sliced Sweet Potatoes
Large Cubes Peppers
Patty Pans
Gem Squash
Broccoli Heads
Sliced Zucchini/Baby Marrow
- SPICES NEEDED -
1 tsp Salt
2 Tbsp Lemon Juice
1 Tbsp Garlic Powder or Garlic Flakes
1 tsp Onion Powder
- METHOD -
- Prep your vegetables by washing them and cutting the bigger vegetables into smaller pieces.
- In a wide pot, heat up the olive oil at a medium temperature, before adding in the garlic.
- Once the garlic starts to turn golden, add in the vegetable stock.
- Leave it to simmer for a few seconds till the vegetable stock comes to a boil before stirring in the rest of the ingredients.
- After a minute, add in your prepped vegetables and slowly mix them into the vegetable stock.
- Reduce the temperature to a low - medium, add in another 1/2 cup or 1 cup of water and cook for around 15 - 30 minutes.
- Keep checking on your vegetables, also making sure the sauce doesn't dry out, but in fact, it should begin to thicken up. If some of the vegetables are still hard, you can add another 1/2 cup water; remember, it should not be watery.
- Once cooked and your sauce is thick, dish out your vegetables, garnish with dry parsley, and serve alongside your main meal.
