Grilled Mango Chicken

I had mango chicken once, and ever since, I’ve been on a mission
to recreate it. That journey led me to two delicious recipe creations; a light,
grilled mango chicken and a deep, rich mango curry. Both deserve their own
spotlight, so keep an eye out for the curry version coming soon. In
the meantime, this grilled mango chicken is the perfect way to
celebrate mango season in all its glory.
This recipe is quick, simple, and effortlessly impressive, one of those
dishes that looks like you’ve spent hours in the kitchen when you really
haven’t. The juicy chicken is infused with a
sweet and savoury mango marinade, making it ideal for easy
weeknight dinners or relaxed summer braais/BBQs. It’s also incredibly versatile
and can easily be transformed into a grilled Mango Chicken Burger, which is my favourite and it truly tastes like summer in every bite.
I’ve made this recipe quite a few times, experimenting with both the
optional and core ingredients, and it never disappoints. If your mango isn’t as sweet as you’d like, a touch of honey
balances the tartness beautifully, creating a well-rounded flavour
profile.
For an extra layer of flavour, I love adding jerk spice, it pairs
surprisingly well with the mango marinade and brings a subtle warmth to
the dish. It’s also a great way to use up a spice you may have sitting in your cupboard, while giving this
grilled mango chicken a slightly different twist each time you make it.

Ingredients
Chicken
8 Chicken Pieces (bone-in or boneless)
1 Cup Mango Puree (1 Mango)
1 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Cayenne Pepper
1/2 tsp Salt
1/4 tsp Black Pepper
1/2 tsp Dried Thyme
1 tsp Dried Parsley
2 tsp Paprika
1/2 tsp Cumin Powder
1 tsp Red Chilli Paste (optional - extra heat)
1 Tbsp Lemon Juice
2 Tbsp Tomato Paste or Tomato Sauce
2 tsp Crushed Garlic
2 tsp Grated Ginger
1 - 2 tsp Jerk Spice (optional)
1/2 tsp Honey (optional)
Garnish
1/2 Cup Cubed Mango
1/4 Cup Chopped Fresh Coriander
Note
- This recipe works beautifully as Chicken Burgers, which is my favourite.
- It can be meal prepped in advance, cooked in the oven, pan-fried, or on the braai/BBQ, the options are endless.
- If you're cooking the chicken on the braai/BBQ stand, set aside a portion of the marinade and mix it with a little extra lemon juice and/or butter or oil. This sauce can be used to baste the chicken while it's on the braai/BBQ stand, for added moisture and flavour.
- If the mango is not naturally sweet, the honey helps balance out any tartness, giving you a well-rounded flavour.
Method with Pictures
1. Add the mango purée, crushed garlic, grated ginger, and all the
remaining spices and herbs to the chicken pieces. Mix well to coat evenly,
then leave to marinate for at least 30 minutes minimum to allow the flavours
to develop.
2. The chicken can be cooked using your preferred method; oven, stovetop, or braai/BBQ. For this recipe, place the marinated chicken into an ovenproof dish (such as a Pyrex) and add 1 1/2 cups of water to keep it moist during cooking.
3. Grill in a preheated oven at 200°C for 20 minutes, then reduce the
temperature to 180°C and continue cooking for a further 20 - 25 minutes, or
until the chicken is cooked through (cooking time may vary depending on the
size of the pieces and whether you’re using bone-in chicken or boneless chicken).
Keep an eye on it to make sure it doesn’t dry out.
4. Garnish with small mango cubes and freshly chopped coriander
just before serving.
