I'm back!!! This year, I aim to post more recipes, not just share content on my social media. In the background, my life has been busy, and this year, more personal life changes are coming; if you follow me, you have some idea. But I still want to make the time to get back into recipe development and food photography and find my passion again.

Can you believe I've had this recipe in my drafts for three years? It's crazy. I had to watch the video of me making it to remember how, lol. That being said, it got added to this week's meal plan so I could recreate it.

As you can tell, it has simple ingredients, is quick to cook, and is very comforting. It's a great way to use that little bit of fresh cream left in the fridge, and it pairs beautifully with crisp salad or hasselback potatoes. 

You know the drill. I shared the method twice, one with step-by-step pictures and one without. This makes it easier to follow along and reference how each step should look.

I've been wanting to make this forever now, and I specifically wanted to serve it on my sizzler stand, which my mum got me for my birthday. I'm so glad I did because not only was it the wow factor for a random Monday lunch, but it tasted delicious. 

Now, I know I served this in a sizzler pan, but in no way do you need to use one for this recipe, unless you have a large one, you can just make this meal in it. I'm just extra when it comes to plating food for my family; also, I needed to take pictures. 

This recipe is amazing; it's a great one-pot recipe with less mess, which means fewer clean-up items. It's quick to whip up, which you will see in the method. If you're in a rush, you can garnish your chicken fajitas the way I did in the same pot you cooked it in.

I served mine with tortillas, but I can see myself making this with rice or noodles. I also served it with my Pineapple and Mango Salsa (click here for the recipe), which hit the spot regarding the flavours, and it was perfect in this heat. 

Who doesn't like a good salsa recipe that will have your taste buds dancing and will hit the spot this summer? 

Whether you want to have a snack of chips and salsa or you want to use the salsa in other recipes, such as a wrap filler, this is a great way to use up some fruits and vegetables in the fridge, and you'll see it's super easy to make.

 Method With Step-By-Step Pictures 

1. Drain and give the tinned chickpeas a quick rinse, before adding it to a food processor. If you want your hummus to be extra smooth, remove all the chickpea skins (I did not).

2. Next, add 2 -3 Tbsp tahini paste.

3. Add in the juice of 1/2 a lemon, this provided most of the liquid, to help blend the mixture. You can add some olive oil, but I did not.

4. Next, add in 2 - 3 garlic cloves.

5. Now add in some 3 - 4 ice cubes, this will make the hummus all creamy.

6. Blend it all together for 2 -3 minutes. You may need to scrape down the edges but continue blending till it's all smooth and creamy.
