Tortillas/Wraps

So this is a filling but light meal, super easy to make and a crowd pleaser. 
It's great for Ramadan where you want to be full but not feel like you ate for a million people.
You can use packet tortillas or home-made mini rotis for this meal,
 but I will share the tortilla dough recipe I have. 
My family and I love light suppers and we usually make this in the weekend.
 The meat marinade recipe can be switched up to what you want to use.
 but this is a recipe we tend to use for the tortillas/wraps.


DOUGH

3 cups flour
2 Tb ghee (clarified butter) - if you cannot find it, or don't have it use normal butter
pinch of salt
1/2 cup warm milk
1/2 cup warm water


  • Make the dough and kneed down a bit.
  • Roll them out and fry them like you would do with rotis but with no oil. (this means spray or use a non stick pan, heat it on the stove, place one at a time the tortilla you rolled out and keep turning and flipping till its cooked on both sides).
  • Stack them on top of each other so they stay warm.
  • Fill in with the chicken filling and serve, 

CUBED CHICKEN FILLET FILLING MARINADE 

Peri-peri sauce
Mayo
Red Chilli Powder
Red Chilli Paste
Grated ginger
Crushed Garlic
Robertson's Lemon Pepper 
Lemon Juice
Olive oil
Salt to taste (please note all sauces and spices have salt already in them so taste before adding salt otherwise it will be too salty)

  • Cook with a little water till done, leave it to be saucy!
  • While its cooking shred up some lettuce, cucumbers, red onions, and carrots - mix all together in a bowl.
  • Make a bit of a vinaigrette; white vinegar, pepper and mustard powder - pour over the salad.
  • When the chicken has cooked layer the tortilla, add the meat down the middle, next the fried potato chips (make sure they're seasoned), top with the salad and than you're good to go!
