Coming up with a a filling yet light meal is hard, 
but this recipe is great if you're one of those people like myself 
that has a few sauces in the fridge you want to use up.

This meal is super easy to make and it's always a hit with the family.
I think it's a given if you're from Southern Africa every family has their go-to 
Mochachos recipe.
I also saw a similar meal on Insta 
and I loved the side dishes which I made along side this recipe.

I will say if you don't have the 'Mochachos' brand sauces,
you can substitute it to similar sauces you find locally.
Stick it one brand and use sauces similar to the recipe
and you have a saucy grilled chicken meal.
This is great for grilling chicken fillet for burgers as well. 



- CHICKEN MARINADE INGREDIENTS -




1 Chicken (disjointed)
3 Tbsp Machacho Peri Peri Sauce Mild
1 Tbsp Machacho Peri Peri Sauce Hot
1 Tbsp Mayo
2 tsp Freshly Crushed Garlic
1 Tbsp Red Chili Powder
2 tsp Robertson's Chicken Spice
1 tsp Robertson's Lemon Pepper
1 Lemon (juice)
Salt To Taste

- SAUCE INGREDIENTS - 


1/2 tsp Freshly Crushed Garlic
3 Tbsp Mayo 
1 1/2 Tbsp Machacho Peri Peri Sauce Hot 
1 Tbsp Butter 
1 Tbsp Robertson's Dry Parsley




- SERVE WITH -

Corn on a cob 
Potato Chips or Crispy Potato Wedges 
Coleslaw
Garnish Fresh Coriander

- METHOD -


  1. Marinate your chicken for around an hour. 
  2. Add into a pyrex dish or baking tray with around 1 1/2 cups of water.
  3. Grill in the oven at around 200 degrees celcius for 30 minutes, before turning down the heat to 180 degrees celcius.
  4. Around 10 minutes before serving heat your sauce up and pour it over the chicken and turn the heat up back to 200 degrees celcius. 
  5. Garnish with fresh coriander.
  6. Serve with some steamed corn on the cob, potato chips and coleslaw.
