Potato Shakshuka 

"On Sunday's we brunch, and what better day to make Shakshuka."


I know, I know it's Monday. I forgot to post this recipe yesterday, anyway... so let's get to it. Shakshuka is a popular go-to breakfast and brunch recipe that features poached eggs in a delicious, spiced tomato-based sauce. 

The dish originates from around Northern Africa and the Middle East and has become very popular in recent years. The word 'shakshuka' derives from Arabic, literally translating to "all mixed up" and is pronounced as "shack-shoe-kah."

I will be sharing my go-to 3 versions of this meal, from the fastest as traditional as it gets recipe, to a recipe that's a bit of a twist and really having it live up to it's "all mixed up" name.

I love how this meal is so quick to whip up and really makes breakfast extra special. It's best to make this in a nonstick pan, it should be served immediately, and you can be as flexible as you want with the ingredients.



CLASSIC SHAKSHUKA RECIPE

INGREDIENTS 


1 Red Onion - cubed 
1 Tbsp Green Chili Masala Paste [click here for the recipe] 
1 tsp Freshly Crushed Garlic
2 Tbsp Olive Oil 

2 Tomatoes - pureé 
4 - 5 Cocktail Tomatoes - sliced in half (optional)
1/2 tsp Salt 
2 tsp Pepper
1 tsp Cumin 
1 tsp Turmeric 
2 tsp Red Chili Powder
1/2 tsp Cayenne Pepper
1 Tbsp Tomato Paste

Eggs 

Freshly Chopped Spring Onions [garnish]
Fresh Coriander [garnish]

METHOD


  1. Braise your cubed onions in olive oil, garlic, and green chili paste till your onions are soft and golden, on medium heat.
  2. Next, add in your tomato puree, tomato paste, and the rest of the spices. 
  3. Leave to bubble for 4 minutes before adding in your bell peppers and leave it to cook for another minute till the peppers soften a bit (if you find your sauce is drying up, add 1/3 cup water ) and cook till the sauce thickens up.
  4. Once you're happy with your sauce, make small wells in the tomato sauce with your wooden spool and crack your sunny side egg in it they made well.
  5. Finally, when your eggs are cooked to your liking, garnish with your spring onions and fresh coriander and serve right away!




BAKED BEANS AND SAUSAGE SHAKSHUKA RECIPE

INGREDIENTS


1 Red Onion - cubed 
1 Tbsp Green Chili Masala Paste [click here for the recipe] 
1 1/2 tsp Freshly Crushed Garlic
2 Tbsp Olive Oil 

2 Tomatoes - pureé 
1/2 tsp Salt 
2 1/2 tsp Pepper
1 1/2 tsp Cumin 
1 tsp Turmeric 
1 - 2 tsp Red Chili Powder
1/2 tsp Red Chili Flakes 
1/2 Tbsp Tomato Paste

1 - 2 Grilled Sausages - sliced
125ml Tinned Baked Beans 

Eggs 

Fresh Coriander [garnish]

METHOD

  3. Leave to bubble for 4 minutes before adding in baked-beans and sliced sausages and mixing it into the sauce (if you find your sauce is on a drier side, add 1/3 cup water).
  4. Let it cook for another 3 - 5 minutes till your sauce thickens up.
  5. Once you're happy with your sauce, make small wells in the tomato sauce with your wooden spool and crack your sunny side egg in it they made well.
  6. Cover your pan and leave your eggs to cook away.
  7. Finally, when your eggs are cooked to your liking, garnish with fresh coriander and serve right away!



POTATO SHAKSHUKA RECIPE

INGREDIENTS 


1 Red Onion - cubed 
1 Tbsp Green Chili Masala Paste [click here for the recipe] 
1 1/2 tsp Freshly Crushed Garlic
2 Tbsp Olive Oil 

2 Tomatoes - pureé 
1/2 tsp Salt 
2 1/2 tsp Pepper
1 tsp Cumin 
1 tsp Turmeric 
1 - 2 tsp Red Chili Powder
1/2 tsp Thyme 
1/2 tsp Rosemary
1/2 tsp Oregano
1/4 tsp Garlic Powder
1/2 Tbsp Tomato Paste

1 - 2 Potatoes - Cubed
1 1/2 Cup Oil 

Eggs 

Fresh Micro Herbs [garnish]
Fresh Coriander [garnish]

METHOD


  1. Braise your cubed onions in olive oil, garlic, and green chili paste till your onions are soft and golden, on medium heat.
  2. Next, add your tomato puree, tomato paste, and the rest of the spices/herbs. 
  3. While the sauce is bubbling away, quickly fry your cubed potatoes till golden and strain.
  4. When the potatoes are done, add them into your sauce (if you find your sauce is on the drier side, add 1/3 cup water), and leave it to cook for around 5 minutes.
  5. Once you're happy with your sauce, make small wells in the tomato sauce with your wooden spool and crack your sunny side egg in it they made well.
  6. Cover your pan and leave your eggs to cook away.
  7. Finally, when your eggs are cooked to your liking, garnish with fresh coriander and micro herbs and serve right away!
