Using chickens cut into big pieces.
MARINADE:
Crushed Ginger and Garlic
Red chilli paste
Lemon Pepper
Crushed Cumin
Tandoori Masala
Salt
Olive Oil
Lemon Juice
Tomato Sauce
Thick Greek Yoghurt
BASTING MIX:
Leftover marinating mix
A blob or 2 about butter
Tomato Sauce
STEPS:
- After cutting your chicken pieces making slashes across the chicken in both directions.
- Make your marinade, taste to see if its up to par and than mix with the chicken. Make sure the chicken is coated well, and the marinade is massaged into the slashes.
- Keep to marinate over night.
- When ready to braai/bbq heat up the basting mix which you must have in a separate saucepan - just so the butter melts.
- Every-time the chicken is turned on the braai/bbq stand keep basting it.
