Chicken Mint Sticks

Everyone knows how obsessed I am with Mariam Mahomedy's recipe books,
this recipe is from the book "Cosmopolitan Cuisine III"


INGREDIENTS 


500g chicken fillet, cubed
1/2 cup lemon juice
1 cup mint
1 tsp garlic paste
1 tsp ground green chilies
1 tsp lemon pepper
1 tsp salt
1 tsp crushed cumin
4 Tb yogurt
1/2 cup fresh cream
Skewers


METHOD

  1. Cut the chicken fillet into strips.
  2. Liquidize all the ingredients except the chicken, yogurt and fresh cream.
  3. Pour the mixture over the chicken fillet and add the yogurt and fresh cream. 
  4. Leave the meat to marinate overnight. 
  5. Thread onto skewers and braai/bbq, keep basting with the the leftover marinade. 
  6. For a more exotic taste, you can add olives to the ends of the skewers after threading the chicken and you can add squares of peppers. 
  7. Serve with shredded lettuce and yogurt and green chilli chutney.

  3. Oh! I am crazy about everything with mint! And I actually only eat chicken meat. Since we have a lava stone grill integrated in our kitchen, I know what my husband will get as soon as possible.

    1. Omw that's so awesome!! Make sure the mint doesn't over power the chilli part of the chicken because than it will be a battle of the flavours on your palette :P

    1. you can get a griller pan or a waterless grilller. They cook the food exactly the same.
