Creamy Corn Salad

You know me I love my sides and one can never have too many side dish
recipes. If you’ve ever been to Nando’s, you’ll know their creamy corn salad
is dangerously good - one of my absolute favourite sides (okay, tied with
the sweet potato chips, Casa Pap topped with tomato relish, let’s be
honest).
So when my sister came to visit, I made sure she tried it, and not long after
she was back home, I got a message: “Any chance you can figure out how to
make that creamy corn thing from Nando’s?” No pressure, right? But challenge
accepted!
So here it is: my Nando's inspired Creamy Corn Salad. I kept it super simple, using two Nando’s sauces
for that signature flavour. It’s creamy, zesty, and definitely a
crowd-pleasing side dish. Can’t get hold of Nando’s sauces where you live?
No worries, just swap in your favourite garlic sauce, peri-peri hot sauce
and mayo, and you’re good to go.
This salad pairs brilliantly with grilled chicken, stuffed into wraps or pitas, or served as a side at a braai or BBQ. It’ll keep for up two weeks in an airtight container in the fridge, though honestly, I doubt it’ll last past day two. If you haven’t seen my previous recipe, click here and check it out! Ingredients
1 Large Green Pepper
1 Large Red Pepper
1 Small-Medium Purple Onion
1 Tin (410g) Whole Kernel Sweetcorn In Brine
Fresh Coriander (1/4 Cup)
1/4 Cup Greek Yoghurt
3 - 4 Tbsp Nando’s Perinaise (or mix Hot Peri-Peri Sauce and Mayo)
1 Tbsp Nando’s Garlic Sauce
1/2 tsp Paprika
2 tsp Lemon Juice
1/2 tsp Dry Parsley
1/4 tsp Salt (to taste)
1/4 tspFreshly Cracked Black Pepper (to taste)
Method With Step-by-Step Pictures
1. Prepare the vegetables by dicing the green, red, and purple onion into small cubes. Roughly chop the fresh coriander. Drain the tin of corn kernels and set aside.
2. Add the diced peppers, onions, corn, and chopped coriander to a
mixing bowl. Then add the sauce ingredients; Greek yoghurt, perinaise, garlic sauce, paprika, dried parsley, lemon juice, salt, and freshly
cracked black pepper. Mix well until evenly coated.
3. Transfer to a serving platter. Garnish with extra fresh coriander and
a sprinkle of dried parsley. Serve chilled.
