"Potatoes always understood the assignment"


I've made smash potatoes quite a few times. It's definitely a family go-to, especially since it's so easy to make and seemingly pairs really well with most dishes. 

I tend to like to stick to the usual herb marinade I make because I find it's packed with flavour and it compliments any dish I'm serving it with. Yes, it may look like Sherk's swamp water, but trust me it's delicious.

The only thing I really do change up is the way I cook my smash potatoes and it always depends on how much time I have. Recently, I've been pan-frying them or air frying them and I found they come out much crispier and cook faster, than when grilled in the oven. I do not add any extra oil when I do pan fry or air fry them, because, the herb marinade has the right amount.

So I'm actually posting this sauce recipe and video next week, so stay tuned for that. It's another very versatile recipe that I've used in a few other dishes, which I shall be sharing as well. 

I don't usually serve this sauce with my smashed potatoes, it was just the one time I happen to make smash potatoes I had some leftover sauce in the fridge and I paired them together and it was delicious.

HOW TO MAKE SMASH POTATOES IN THE OVEN

The most common way to make smash potatoes is to grill them in the oven. It's all the same steps to make the smash potatoes, but you just pop them in the oven at 180 Degrees C for 30 - 45 minutes till they're crispy. 

HOW TO PAN-FRY SMASH POTATOES

My new favourite way to make smash potatoes is pan-frying them on medium-high heat, let them crispen on one side, before flipping them over. As I mentioned above, I do not add any extra oil to the pan, as the smash potatoes are already coated in the herby marinade. It crispens up in around 15 - 20 minutes, which is much faster than in the oven.

HOW TO AIRFRY SMASH POTATOES

Another fast way to make smash potatoes is in the air fryer. Again making them is the same process, once again I do not add any extra oil when I add it to the air fryer. It cooks in around 10 - 15 minutes at 200 Degrees C, again quite fast as well. 

HOW TO USE GARLIC CONFIT OR ROASTED GARLIC IN THE HERB MARINADE

As you will see in the video I show myself using garlic confit the one time I made smash potatoes. I love doing this when I have some on hand. Also, because the garlic was slowly cooked with herbs and spices, it brings another level of flavour to the smash potatoes, you can also use slow-roasted garlic cloves. 

I just add a couple of the garlic confit to my pestle and mortar, along with some of the oil, and all the herbs listed in the ingredient list down below and I pound away till it's all mixed properly. INGREDIENTS

5 - 10 Baby Potatoes
 
1 - 2 Tbsp Butter (or garlic butter)
1 - 2 Tbsp Freshly Crushed Garlic (or a couple of garlic confit cloves - recipe here)
1 tsp Parsley
1 tsp Mixed Herbs
1/2 tsp Salt
1/2 tsp Pepper
1/4 tsp Red Chili Flakes
1 tsp Garlic Powder
1/2 tsp Onion Powder 
1 tsp Olive Oil


METHOD WITH STEP-BY-STEP PICTURES

1. On high heat, in a deep pot, cover the baby potatoes in water and let it boil. Keep checking on the potatoes, by giving them a quick poke with a skewer or a toothpick to check if they're soft. Once they're done, drain the water from the pot and keep it aside.

2. Make your herby marinade while the baby potatoes are boiling. If you're using garlic confit (or roasted garlic) to make the herby marinade, add your garlic confit (or roasted garlic) along with the rest of the spices and herbs into a pestle and mortar and pound away till it's smooth.

3. If you're using the above-mentioned ingredients as is, mix all the spices and herbs into a bowl. You can use garlic butter, instead of garlic and butter separately, just melt it down first. I prefer the marinade to be smoother, I find it coats the potatoes better.

4. Now, you can mix the boiled baby potatoes in the herby marinade before you smash them or after, it doesn't make a difference. To smash the baby potatoes, use a meat tenderiser hammer or the bottom of a wide-rimmed glass, and press it down on your potatoes, one by one, till they flatten, don't worry if they don't look perfect, they're supposed to look rustic. They should easily smash down if they were boiled enough, if not, you may need to boil them for a bit longer.

5. There are 3 ways you can cook your smash potatoes, The 1st method, is you can pop them onto a lined baking pan and place them into a hot oven at 180 Degrees C for 30 - 45 minutes till they're crispy. The 2nd method is by placing them into the air fryer for 10 - 15 minutes at 200 Degrees C. Finally, the 3rd way you can cook them is by placing the smashed and marinated baby potatoes into a hot frying pan, and cooking them on medium heat, let them get crispy one side before flipping them over, cook for 15-20 minutes.

6. Garnish with some freshly chopped coriander, and serve as is with your prefered main dish. It can also be topped off with some sour cream, or the sauce that's shown in the pictures (recipe and video coming next week).
