Asian Slaw

I know, I know another side dish, however, with Summer in full swing, some light side dishes are just what we need. Plus, sometimes you also want to whip up a quick side that's delicious and
different from the usual salad or coleslaw, and this is one of those recipes
that will do just that.
It's a great recipe to use up some leftover vegetables you may have in the
fridge, which is exactly what I did. I used the Peanut Sauce dressing, which I've posted before, click here, for the quick dressing recipe.
You can use the Asian Slaw as a filling for wraps, sandwiches, or burgers. It pairs
perfectly with some fried chicken or teriyaki chicken (stay tuned, the
recipe is coming next).
Store in an airtight container for up to 1 week, making it ideal for meal
prep.

INGREDIENTS
2 - 3 Baby Red Cabbage (1/2 a Large Red Cabbage)
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Green Bell Pepper
2 - 3 Carrots
1/4 Cup Peanuts
1/3 Cup Chopped Fresh Spring Onions
1 Tbsp Sesame Seeds
1/2 - 1 Cup Peanut Sauce

METHOD WITH STEP-BY-STEP PICTURES
1. Prepare the vegetables by chopping red cabbage, slicing red, yellow,
and green peppers, and grating carrots. Place all your prepped vegetables
in a bowl.
2. With your peanuts, add them to a small pan on medium-high heat and
gently roast the peanuts till they're golden, watching that they don't
burn. Once done, keep it aside.
3. Make your salad dressing in advance. For the peanut sauce recipe,

4. Pop all the prepped vegetables and 3/4 of the roasted peanuts into a bowl, and give them
a toss.
5. Pour over the peanut sauce dressing and mix well.
6. Finally, before serving, garnish with the leftover roasted peanuts, chopped
spring onions, and sesame seeds.
METHOD WITHOUT PICTURES

I made this for bao buns and everyone liked it. Will make it again the sauce is so different too.
